Once you have a small layer off black onion gunk on the pan, throw some water in. The water will pick up the gunk and make a juicy brown liquid. It will go back into the onion. Allow the water to evaporate and repeat rhe same process a few times until the onions are a deep brown, they will be very soft and have a lot of flavor. Add some salt and ur good to go, thats how u properly caramelize onions.
