      @@raerohan4241 Chicken lollipops are *not* made with drumsticks. They are made with a part of the wing called the "drumette".

    You should try Maangchi’s fried chicken recipe. The one with the gochujang/ketchup/honey sauce. That was the best I have EVER had!

    Lollipop chicken is only worth it when you keep the bone part clean. That’s the only appeal to it. If you’re making chicken wings it’s stupid to lollipop it because you’re just gonna coat the clean part in sauce. Chicken wings when cooked like that are messy, no way to go about that.

      @@oldvlognewtricks. That is possible, but for the most part, chicken wings are known to be covered in a sauce and eaten like that. A hands on messy meal for games or for drinking.

    I do Kenji Lopez-Alt's dry brine oven wing method and Food Wishes honey sriracha sauce. The wings are super crispy even as leftovers and the sauce is a great combination of spicy, sweet, and nutty.

    The best ones on RUclips are easily the Korean wings from America’s Test Kitchen. Been making them for years. Nothing beats that fry method and batter

    Biggest wing life hack when baking wings is to throw them back in on broiler after they have been coated with the sauce. This will get them crispy and allow sauce to stick on em. If this was done with wing #3, for example, as the final step would have been perfect. Tender and juicy inside and crispy outside with just another 1-2 min of cooking on broiler mode.

      Why not? The fun part of cooking is testing and experimenting new things
      Baked wing is less messy and easier to clean afterwards. Rie skill is just as good as a pro chef so no doubt her sauce is full of flavours.

    I make Chef John’s all the time! But with a buffalo sauce instead. They are so so good and I get compliments on them every time! They reheat super well in the air fryer ☺️

      An air fryer is an oven. You could cook the wings there too. I always cook wings in an air fryer.

    For absolutely classic but easy wings Alton Brown has to beat them all with his oven wings. crispier than crisp and delicious with a little garlic thrown in.

    I definitely came in ready to *fight* for Chef John ❤ Glad you liked the wings! J. Kenji López-Alt uses a similar baking powder method, and I’ve made both many times. The baking powder itself adds to the extra saltiness, so depending on how many wings you use or the actual size of the wings I’ve had to adjust the salt waaaaaaay down.

    it's strange. David says about people being afraid of deep frying things. My mother - that was all she did (I realize now not good). It never occurred to me to be afraid of a giant pot of hot oil, but I never worried about it. I don't deep fried much now but it's never bothered me to do so.

      Well, afraid is liberally used. Its not only about being afraid of hot oil, but what to do with the oil once finished and how it can stink up a house. Its just not very pleasant, and often you can get more than good enough results pan-frying.

    Just out of curiosity: In which order do you do the recording, the tasting and the voiceover for the cooking part? Cause you referenced the voiceover in the tasting part but it also seems like you do the tasting right after the cooking, so I was just wondering when the voiceover happens

      He likely is saying stuff whilst cooking, but then makes a script/does the voiceover after tasting when he’s editing the clips all together

    Tebasaki (aside from maybe the potato starch,) I think is the most classic way of cooking wings. Just do that, then for a sauce, melt some butter with a splash of the fry oil, and a bunch of Frank's Redhot, and you have the classic Buffalo wing.
    Now I'm hungry.

    Kenji also uses a similair recipe to chef john, he uses 1 teapoon each of salt, corn starch and baking powder per pound of chicken wings

    I love Chef John's wing method. I go the J. Kenji Lopez-Alt route and add some corn starch for a bit of extra crispiness, though. They turn out so good. Fork don't lie.
    Rie's wings look incredible. I gotta get some potato starch and give those a try.

    Okay so I made Kenji's baked wings a while ago, and it's very similar to Chef John's wings. You mix salt, baking powder, and corn starch and let that coat the wings to keep them crispy in the oven.
    I followed the directions and used kosher salt as directed, but they were also WAY too salty! Like it's all I could taste after. Maybe my kosher salt was finer/less consistent than the salt they used, but I can confirm your findings!

    Since I got an airfryer and tried a couple method I must admit you can get something really crispy and delicious without deep frying. They're so damn delicious and so easy to make. I try to avoid frying when I can, so the air fryer comes in really handy :)

    I might have to figure where to buy a some good unseasoned and not breaded vegetarian chicken wings so I can try Rei's recipe myself

    The thing is that chicken skin is mostly fat content, the bird has really lean meat so all the fat content ends up there. By baking them with a dry rub they render lots of fat slowly and the skin dries beautifully and becomes quite crispy.

    More Food Wishes! I watched so many of his videos over the years and he's always left out of things like this.
    On Chicken Lollipops- I think it actually can make the meat more tender, since at high heat the meat can't seize the same way against the tendons. The tenderness you commented on is because of this pre-dressing. It's a way to make less expensive meat taste more expensive.

    You have to double fry the Asian wings 325 for 6/8 minutes remove rest while oil is heated to 375 to finish

    Not sure if anyone commented this yet, but it looked like you were using regular baking powder for the third recipe. You should try aluminum free baking powder. The aluminum in the baking powder gives it a weird taste especially when you use a lot of it on the wings which it sounds like you tasted in your review.

    Honestly, I started making our chicken wings in the air fryer and I'll never go back. It's so easy. And you save a few calories because you're not adding any extra fat.

      @@ploppyjr2373 The air fryer uses half the energy, gets things crispier, and doesn't heat up my whole apartment in summer. So yeah, I'll stick with my air fryer for wings.

    I like to just by some fried drumsticks from my nearest store and pop them in the air fryer at 400 and while they're cooking I mix a couple tbsp butter and garlic in a small pan and let it heat a bit so the garlic gets infused. Then I add some chili garlic sauce from the same company that makes Sriracha..it's way better than Sriracha! The company that makes it is Huy Fong and it's just called chilli garlic sauce!
    Anyways, I put some of that in the butter garlic mix, add some salt and pepper and then I add the honey and splash of lemon juice. Heat it so everything combines, stirring constantly.
    Then I add the chicken directly into the pan, and I use a silicone baster to move the honey sauce on the chicken so it gets coated everywhere. Then I put the fried chicken into a bowl or on a plate and then tilt the pan to cover the chicken in the sauce. It's so good and fast and simple! Try it out! Add whatever you'd like, like sesame oil/seeds or thinly sliced green onion.

    Definitely need to revisit this with America’s Test Kitchen (Dan) recipe. He makes the crispiest wings and they are the best ever. Promise you.
