In this episode of Botched by Babish, Josh Scherer of @mythicalkitchen is here to air his grievances with my chicken parmesan recipe. In a Botched first, I disagree that I botched this recipe at all, but we invited Josh over nonetheless to hear him out and put his methods to the test.

It’s the gold standard of chaos. Like everyone was saying for ages that Josh and Brad should collab but it turns out that Brad is not chaos, he’s just chill so the chaos was something he had trouble handling. Andrew, however, can ride that chaos and they can do beautiful things together

He's so chaotic that he alone has brought enough chaos for a single Botched by Babish episode.
Did Josh travel across country unsupervised? Was he flagged like an unaccompanied minor in the airport? Did Nicole drop him off with a little snack packed for the flight and Kendall pick him up with another snack? I'd personally like to think so because thinking of him traveling unsupervised is mildly concerning.

I actually really appreciate Josh's take on the sauce. I'm allergic to onions in the first place, but sometimes it's about enjoying the simple things like the mesh of crispy chicken, tomato and mozzarella.

I've been watching Mythical Kitchen for about 8 months now and still appreciate but am a bit jaded to Josh's level of chaos. I'm reminded just how outlandish he is when he's a guest on other cooking shows because he always brings the whole show up to his level of silly and I absolutely love it.

Shaking the Pan (in a Kind of round motion) is actually a very common tecnique used by the austrians for making perfect Schnitzel
yeah babish was probably thinking of how you vigorously shake the pan in other dishes, like to emulsify a sauce, which would send hot oil flying everywhere. a nice circular motion would've been fine
They normally use slightly less oil, that pan would have almost definitely splashed
I love the idea of Botched by Babish being a mix of Andrew coming in and actually improving a dish but then also sometimes having someone come in to help him botch it
I want to see Josh do this exact format with Gordon Ramsey and the grilled cheese sandwich.

The "shaking the pan" technique reminds me of what I do at work when I'm making stuff in our deep fryer. If it isn't evenly browned I just take the fryer basket out and shake it a few times.
Oh definitely shake the basket in the oil if it's inside a deep fryer, but don't shake the pan full of hot oil on a gas burner- unless you want the insurance money and don't want your eyebrows.
I loved how Andrew had the look of an existential crisis when Josh asked if he had ever thought of using a bigger whisk 😂

9:09 - How Josh went from "Casual and hanging out with his friend" to "Internet Personality Mythical Chef Josh" scared me, not gonna lie.
Funny, my recipe for Chicken parm is a combination of Mythical kitchen's chicken parm, (Which is slightly different than this one) and I used the basic pizza sauce recipe made by babish on the chicago style pizza episode. To finish, I do something slightly sacrilegious, make a bed of garlic butter noodles and put the pam chicken on top. Kind of like serving it with tiny strings of garlic bread was my thought on that.
That sound really really delicious!
I use Babish’s recipe with Josh’s egg white trick and Alton Brown’s sauce

Feels like bab was a little stressed with the chaos. Pretty funny. Also there is room for fancy/ perfect chicken parm and the old fashion soggy stuff depending on mood. I prefer the crispier version on a sandwich especially
I always make extra fried chicken and put it away for the next day. Then add the cheese and sauce before broiling. It's a slightly less crispy version but still amazing the next day.
That's the great thing about food. The right way is whatever you want!

In the north east of the UK we have a different kind of chicken parmesan. It's breaded chicken covered in a thick bechamel and topped with a layer of melted mozz/cheddar/parmesan mix. It's unbelievable Jeff.

This has got to be one of the most fun episodes of Babish I've seen. Josh is such a fun, lovable, knowledgeable, knucklehead and it was both informative and entertaining to have him on this show (check out his podcast "a hotdog is a sandwich" to get more of this)

I've made Babish' recipe for chicken parm multiple times and it's always phenomenal and everyone raves about it.
Seems that Josh's problem wasn't the flavor or even the authenticity, just that it was too froufrou lol
On any day in October, make something so gross or unhealthy that it's too scary to eat/drink:
Regular Show- Rig Juice
Spongebob- Nasty Patty
Cloudy with a Chance of Meatballs- Pizza stuffed inside a turkey (whole thing deep fried and dipped in chocolate)

I honestly have made babishes recipe and I think it is so much better, I think that I only somewhat enjoyed chicken parm before and now I am a big fan, I like a little sog too but with traditional parm it get soggy too quickly and I don't like it
Judging from the traditional ones I've had from Italian chefs I'd say extremely sloppy and soggy.
Even so, it all depends on what you like to eat. If you want it crispy, make it crispy. If Adam Ragusea can make crispy chicken parmesan, then I think it's fine to do things your own way.

watching it again 2 months later and I realize that the unsung hero of the episode is the intro they made. everyone focuses on Josh being crazy and Andrew being the straight man, but that song! and the editing!

Same! It's my favorite thing to make. My mom had to start a low carb diet and she chose that as her last meal before starting.
@@alexandercanella4479 Considering the amount of breading relative to the whole dish, I would think chicken parm would be acceptable on a low carb diet. You gotta have *some* carbs.
In general, in actual Italian sauces, you either use garlic or onions, and rarely both.
The same goes with Oregano and Basil. Usually one or the other, but generally not both. Basil is way more common.
Sauce: Had an Italian Grandmother and have been to Italy multiple times.

Idk, I liked Babish's version of chicken parm. I made it myself and thoroughly enjoyed it!
I am of italian decent, born in america in the 70s. I make my parms like Andrews. I use panko & i put the sauce on top of the cheese so that my parms dont get soggy. I LOVE the crunch!
