Interesting and great recipe. I am diabetic so I have to watch the pasta rice and potatoes. Once I get to where I can have a small.portion and not be tempted to eat more I will make this one. I have to up the protein a little bit and do a side salad or tuna thank you I am going to go check out your recipes. Glad I found your you tube channel.

I am surprised that a lot of these recipes aren't made with whole wheat pasta? This looks delicious I thought white pasta was bad for you? This is a little confusing.
I mean anything is bad for you if you eat too much, use whatever pasta you want.

How does the Mediterranean Diet deal with salt use? Nowadays it is fashionable to say to use little salt or to use no salt at all. How about the Mediterranean Diet?
The Mediterranean Diet tends to be lower in sodium because it doesn't have a lot of processed foods. Some recipes are higher in salt because of higher sodium foods such as olives or feta cheese, but generally it isn't an issue. You can always use less salt in recipes if so desired.
Tip: don’t use a processed table salt, that’s the harmful one. Get a good quality sea salt like Celtic or Himalayan. They contain a multitude of minerals the body needs.
