    I just started the Mediterranean food diet. An unexpected side effect was that i no longer get nightly leg muscle spasms. Perhaps I had a side effect eating canned and processed foods. This is a wonderful development! I made your recipe with eggplant and zucchini and loved it. Now I’ll make this spinach salad and anchovy/tuna pasta sauce. Sounds weird, but so did the eggplant recipe! Thanks heaps.

    Thanks for your great videos Bill. I have been convinced of the benefits of eating Mediterranean for many years, even managing to source your book which was quite a feat in Australia a few years ago. But I found the recipes so different to what I was used to I couldn’t really get into it. But now as I see you cook and hear the explanations it all makes perfect sense. I still can’t bring myself to pour a cup of olive oil into a recipe but I am finding I can do about half and am so surprised about the flavour it adds. Keep up the good work

    Hi Bill! I just found your channel a few days ago. Thank you for creating this channel. I primarily eat clean,but not going to lie, I like chocolate bars and homemade cookies. I'm finding that true Mediterranean cooking/eating is a bit different than many North American-style 'Mediterranean' recipes. Ive gotta get used to eating less, because I'm an oinker and have never been someone who eats like a bird. So, my challenge, is to lose abiut 15lbs of extra chub that Ive collected in spite of eating primarily healthy, no/low processed food. I still use butter, but add about equal amount of EVOO to help cut some of the sat fats.

    I cooked both recipes tonight for dinner and they were outstanding! I've never used anchovies (paste was all I could find) or blue cheese. And I don't usually like olives but decided I needed to make friends with them. With a half glass of red wine to go with it, I felt downright gourmet! Thank you 😊

    I made the Seared Mushroom Salad with Blue Cheese the other night and it was great, will definitely make it again. Tonight I made the Pasta alla Puttanesca with Canned Tuna, OMG this was SO GOOD, we had a side of the Spinach with Feta & Lemon (which I have now made twice) My partner was a bit dubious when he knew I was doing another Mediterranean dish tonight BUT he loved this pasta dish too. We usually do the old spag bog with the rich tomato sauce and what we call minced meat here in Australia, but after having Pasta alla Puttanesca with Canned Tuna, I doubt I will be making the normal tomato sauce minced meat spag bog again. 😍🤩

    Just cooked this. Didn't have any wine, so I splashed about 1 tbsp of apple cider vinegar in, then thought Oops! That might have wrecked it. So I added more olive oil to dilute it more. Turned out amazing. Best tasting dish I ever made with a can of tuna!

    I love the tagine pots on the shelf behind you. Maybe you can do a meal with them. And if you bought them in Morocco or Tunisia I would love to hear about your travel and cooking experience there.

    Do you think that Sprout's brand of Olive Oil a good oil? Should I store mushrooms in the refrigerator or at room temperature? Can you do some budget cooking Mediterranean meals? Love your videos. Your meals always look so yummy.

      Hi Denise, It's a little hard to tell. It is certified non-gmo, but that only tells me part of the story.

    LOVE MUSHROOMS!!! The only downside is both Walmart and Aldi's store carry regular mushrooms, but they are slimly and horrible!!! I buy them in a can. My question is can you still make "canned" mushrooms just a note: Yuck, can you still make a gravy with it? Thank you for the video!!!! Soo much to learn

    The best tinned tuna is Rio Mare which is a famous Italian brand and it comes in olive oil.

    I am just starting on this diet plan because I have the choice of lowering my cholesterol (I had a major heart attack) or go under something like Hospice care. I love vegetables, but my family, not nearly as much as me, so I can't always cook what I like. I have my blood tested in 3 weeks to get a current levels and then again in 3 months. In 3 months if my blood work isn't going down enough, then the Home care will be called. I personally think I can do it, but it will be hard.

    Hey! I am thinking about starting this diet, but what is the verdict on using about 5 oz of chciken instead of tuna? Something about a tuna pasta just doesn't sit right with me 😂

      Carbs are not the enemy. Processed foods are the biggest issue. Too many grains can be an issue as well.

      The Mediterranean Diet is one of the best diets for diabetics. You might decrease the grains a bit, but it works really well.

      You can just take out the anchovies, but I might just try them cooked this way. I thought I didn't like them either, but when they dissolve in the oil they just add a mild flavor.

      You lose weight eating pasta by a) not eating too much pasta, b) having more vegetables with the pasta (and olive oil), and c) not eating it all the time. You still have to be careful not to have huge amounts of pasta. One of the other big differences between pasta and bread is that pasta has a lower glycemic index for lower blood sugar spikes and therefore less cravings. -Bill

      In Italy you eat, at least most italians about 70g - 100g. about 80g net carbs. not a lot but heavey. tends to be a meal around lunch. lunch tends to be bigger. The pasta is made with vegetables, other kind of sauces and meats. In the end you control the portion. Maybe go for bean pasta's, quinoa pasta, etc. they tend to have more protein. If you going for plain pasta and you live in the states dececco and delallo brands of pasta are the best no go for barilla unless its like collezione.

      They don’t actually eat loads of pasta, they eat a small,amount, I find 50g each is plenty, I cook 100g for both of us.
