How to Cook an Authentic Mediterranean Dinner (Lebanese) | Class 3

  • Join Bill as he cooks, from scratch, a traditional meal from Lebanon (recipes included!). He will be making three authentic Lebanese recipes that are healthy and delicious, as well as answering your questions in the chat 😃.

    What is authentic Lebanese food?
    What is meze?

    How does Lebanese food compare to other Mediterranean cuisines?
    Every Mediterranean country has a tradition of small plate foods that are eaten either as appetizers or as a meal on their own. In America, we are most familiar with Tapas from Spain, but there are many other versions of Tapas from other countries. The Lebanese version is the “Meze”. These small plates of food usually are served in a particular order typically beginning with a number of lighter dishes such as fattoush, yogurt with mint and cucumbers, olives, and hummus and are usually eaten slowly over conversation and drinks. The next round of Meze at a meal includes more vegetables and eggs, then more filling fare such as grilled meats and fish stew. A traditional meal consisting solely of Meze can have 15-20 different plates of food!

    MORE videos that showcase meals from specific places throughout the Mediterranean. PLEASE! Truly authentic recipes are exciting and it is difficult to find Mediterranean cookbooks that haven't "Americanised" the meals.... HELP! Lol

    Too funny. I just walked in with my food from the Lebanese restaurant down the street, I have Lebanese fattoush, crushed lentil soup and hummus. I opened RUclips on my phone and your video was the first one I saw! Which is kind of creepy but I love watching you cook so I watched it. Can't wait till your cookbook gets here!

    I am learning a lot, but I have a question..what do you eat for breakfast on this diet? I am a huge egg eater, and so is my husband.

      Eggs are eaten by many in the Mediterranean, often with some veggies like a spinach omelette. In some parts of the Mediterranean, breakfast is barely eaten. Breakfasts can run from bread with tomatoes and olives to croissants to yogurt with fruit and honey. What is not eaten is lots of bacon or pancakes or cereal.

    What brand of olive oil do you recommend?

      The best brands are extra virgin, unfiltered olive oil. Brands that are pretty good that are common everywhere include: Kirkland organic extra virgin (Costco), Trader Joe's Greek extra virgin and Whole Foods extra virgin. The best is to buy from a place where you can taste the oil yourself and check to make sure it has the anti-inflammatory peppery burn (a measure of freshness).

      I downloaded his Foods of Crete book, from his website. I believe it has some rice dishes, all the recipes have been delicious so far, and easy. I'm sure much of what you eat is in line with these recipes. Welcome from Canada ❤

    Success of some diets is to gain and maintain weight. My friend needs to gain and maintain her weight to manage anorexia. Mediterranean diet is still recommended by her doctors for brain health.

    Ok, I'm getting confused. When I look up authentic Mediterranean meals, they show beef as a dinner meat. I thought beef wasn't allowed in authentic Mediterranean countries. It seems to be getting hard to find real, authentic Mediterranean meals. The ones I find are American re-done.

      They eat beef in the Mediterranean, just less of it. Their main protein sources are legumes, beans, nuts and seeds along with full fat dairy e.g feta cheese and Greek yoghurt.
