To snap to other vertices, you can activate the snapping setting, and set it to vertex mode. Then you get a "Sketchup"-like functionality to your snapping.
Instead of using the 3d cursor you could scale to active element instead of scale to cursor. Select the verts you wanna move then select the destination vert last then simply scale to 0. The destination vert acts like your cursor and it eliminates a step.

I would highly suggest binding the snap to window on the top bar of blender to something easy like a mouse button, 4 or 5 and using the vertex snap feature rather than using the 3d cursor as a pivot point to snap verts in place, this way you also have super quick access to things like edge center snapping and edge perpendicular snapping

I would have gone with bevel and then cried and cried to fix the geometry. Cannot wait to see the animation. If you do decide to make the animation, it would be good if you can talk about the lighting (not HDRI) and how you control the lights in an animation. Cheers :)

Muscle memory makes snapping faster for me, the difference would be marginal so it's not worth retraining
