I’ve never tried canning onions! I love the idea tho! Can you tell us more about the texture and how you use them? I usually just chop and freeze any onions that are about to go bad. I would love to get them out of my freezer if canning them is a good option! I know that you understand that freezer space is at a premium! 😂
Im going to try to do the challenge as well. I had a ton of fruit and veggies i cooked up and need to eat!!! I have applesauce and roasted mixed veggies. I received most of it from the food bank.
I will be trying to do the full two months of the pantry challenge. My exceptions are my birthday and wedding anniversary in January and purchasing my favorite citrus that is only available January thru March. Good luck to everyone participating!

I have been so busy canning what we can grow, locally grown fruit in season and meat on special to can or freeze. We have a nice stock in pantry etc. We got a wheel barrow of garlic, 8 bushels of tomatoes last years garden. Planning next springs seeds for garden. I may have mentioned the dehydrated potatoes. I found a recipe for making scalloped potatoes mix using them. So good! Hoping to have another good crop of potatoes and do it again. Missed getting seed potatoes last year before they were all sold. They were so good fresh.
I asked you had you ever considered punching them on the previous video. Then I know someone else suggested it also. I’m glad it worked out well for you.❤
I'm going to use the blanching trick for dehydrating potatoes. After peeling and thinly slicing a load of potatoes, they turned gray/black in my dehydrator. Who knew they could get so ugly?
