It doesn't always have to be about new fangled flavour combinations and complicated methods. Sometimes what you need is the simplest thing to make you happy. Enter, The Victoria Sponge! This is a great British Classic using the simplest ingredients to create a really delicious tea-time treat which is just right for Summer picnics.
\\RECIPE//
Start by weighing 3 large free-range eggs in their shells.
Whatever they weigh, you will need to measure the same weight of the following-
softened unsalted butter
caster sugar
self-raising flour
You will also need -
1 tsp baking powder
a pinch of salt
1 tsp vanilla extract
1-2 tbsp whole milk
Also...
300ml double (heavy) cream
3 tsp caster sugar
a punnet of fresh LOCAL strawberries!
some caster sugar for sprinkling on top
Jemma xxxx
I've made this before and gotten RAVE reviews. It's so light and sweet and perfect for summer. I like adding lemon zest and juice to the cake itself and it''s so yummy.
She taught me how to make a cake... I remember using this recipe years ago. I just felt like baking again and using her recipe again. Glad I found her again! Thanks
Do you think this cake would pair with buttercream frosting or it would be too sweet?
(i have leftover saffron and cardamom frosting and need to bake a cake to go with it)
Nothing like a good, classic, light Victoria Sponge. One of my very favorite desserts ever. This is beautiful, Jemma!
Did u understand the ingredients like how much to put in
Yes, the recipe is written in the video description. The sugar, butter and flour amounts are determined by the weight of the eggs you’ll be using, in equals. I tried this recipe at home, and it came out delicious, and very pretty :)
Thanks how much of it did u use
@@rooparajeev6327 the weight of the eggs is the weight of ur caster sugar, ur flour and ur butter, so if u had eggs weighing 200g, everything should be 200g too
Finding out the weight of the eggs then making the other ingredients match the same I think that's such a top tip.
Can't wait to try this well done Jemma 😉👌x
OMG Jemma, your weighing the egg tip is genius! This is the first time I have had such a fluffy moist cake.
My daughter and I added some orange essence and zest to the sponge and added a thin layer of raspberry jam with the whip cream and fresh strawberries. What a delicious cake 🎂😋. Love all your videos, really good at teaching and I love that you don't chat and chat and chat for eons before actually getting into the recipe (like so many other vloggers)
I have just made this sponge and it was a roaring success! My partner is the cake master and he said it is the best Victoria sponge he has ever had! Thank you for the recipe ❤️❤️
Gorgeous Victoria Sponge, CupcakeJemma! It's one of my favorites. In fact, I made one this week. Great J/Gemma's think alike! ;-)
Did your victoria sponge turn out nice!? Mmm... I need to make one this week for sure! ;)
did you make a video on it?
I’m thinking of making this for my mum’s birthday, because she doesn’t like frosting that much and she loves sponge cakes!
It was really good 😋 I’m making it today again for her birthday lol
Wanted to make a Victorian sponge cake for the first time and used your recipe and it came out amazing! I used Kerry gold unsalted butter and organic eggs. My husband loved it! Thank you so much! Diana from nyc
Loving the sponge Jemma! Looking forward to the book! :)
Ye me too! Btw u cute¡
Yeah
Donal Skehan will
Your video was just above hers
Made it and it came out perfect. Best sponge cake I've had since my great grandmother passed away. She always made the best cakes. And it's such a simple recipe! Thanks :)
This recipe works! Light yet moist sponge ..so delicious! I used buttercream in the centre instead of cream and it turned out excellent! Thank you Jemma😊
Hi jemma, me and my daughter learned how to bake the best and amazing cakes and cupcakes ever your recipes come out perfect at all times, thank you so much,we wish the best, you are the best 💌
Jemma I made it by your recipe and it turned out simply amazing and really delicious. Served with kiwi fruit since strawberries weren’t available at the time. Today I made again and this time with strawberries. Thanks Jemma. Everyone loved the cake
Absolutely loove your recipes as they are well explained throughout , I have tried few and after couple of attempts they turn out yummy . Compare to all celebrity bakers out there you absolutely know how to teach Jemma 💕
Do you think this cake would pair with buttercream frosting or it would be too sweet?
(i have leftover saffron and cardamom frosting and need to bake a cake to go with it)
I just made it this evening. All I can say is shut the front door! The sponge cake was divine! I didn't have any fresh strawberries in the house so what I did was make a whipped cream vanilla buttercream. Transferred into a pipping bag with a Wilton 1M tip and filled the middle then I did a couple of rosettes on the top. The hubby and I never had Victoria sponge before. He loved it and so did I! Very light and yummy!
Use strawberries as natural sweetener. Brilliant. This is why you want to make your own cake. Enjoying this recipe so much. Thank you Jemma
The BEST part of this video is at 6:11, when you said something with a mouthful of cake. That added to the cuteness quotient, and THAT IS WHY I subscribed to your channel. Plus, my late mother loved sponge cakes and her name was Victoria. Cheers from Malaysia.
Hi Jemma your Victoria sponge is supper delicious I did it for my grandson on his first birthday and the cake was a success every body gave us very good comments thank you so much I am a faithful follower of your recipes xx
This was my first attempt at baking, and I’ve got to say it’s the best tasting sponge I’ve ever eaten.Thank you so much Jemma .
How wide were the cake tins you used
Hi ,I used two 8 inch tins.
Thank you
Made this for my birthday and omg 😍😍😍😍
So so good!
The only thing to keep in mind is it's a butter cake so it doesn't refrigerate well (hardens). Keep it at room temp if you want it to stay soft.
I am stress baking. Found this recipe on you tube and thought "I could use a little summer." I went in what I call my summer box. That is where I keep the strawberries, mangoes, and other summer fruits from my garden. This is the best cake made all winter! Thank you for sharing it with me. I have another bag of strawberries and I will make it for Easter. Thanks again!
Same! Making this in the middle of winter!
I am going to make an Eid cake with this recipe. Just a child on my mums phone but who said I can’t bake from her. Thanks so much for the recipe Jemma, your my favourite.
Sameee!
My go to recipe for cake!
Really easy to remember, used this recipe a couple of times now and people always say it's great cake. Thanks Jemma!
Hi Jemma! I'm a massive fan! 😃 I recently made your Victoria sponge cake for my mam's birthday and she and everyone else loved it! So did I 😍 thanks for all your great recipes 💙🍰🍭🍦🍫🍩🍪🍮
I tried this recipe.. my family absolutely loved it.. thanks Jemma, nice and simple
Best sponge ever!❤ I have been making this recipe for years. Perfect every time
This is the yummiest cake I ever tasted my whole life!! I’m a Filipino who works here in Dubai, and I made these one for my colleagues from the UK and they looovveeeddd iitt!! BTW I put my home made strawberry jam (made from fresh strawberries ofcourse) instead of fresh strawberries and it’s delishh!! Thank’s for sharing your recipes Jemma! been watching ur vids since last year! ❤️🥰
Thank you Jemma. I agree about the British Strawberry, the best! Great video. I’m allergic to egg so I’m going to have a go at your recipe replacing the egg to grounded soaked flaxseeds. 🤞
I've made this millions of times. It's amazing 😍😍😍
I made this for my family and my whole family said it was the best cake they had ever tasted
Thanks for the recipe Jemma xx
Jemma....I’m in love with this recipe! It’s so delicious. I’ve been looking for a easy delicious recipe for a vanilla cake and boy did I find it! Thanks for sharing. This will be getting a lot of use in my future baking. It’s not to sweet and such a lovely texture! Love love 💕 it. Again, thanks for sharing your amazing recipe and others as well. Love your channel. Your recipes haven’t failed me yet. 😄💐❤️❤️❤️
Jemma, I thank the Universe for coming across your channel. Your recipe is the real deal. Imade it and it made my Sunday. Great work!
I made this today for my mom for Mother’s Day and it looks great!
When my mum taught me how to make this,I was happy
And when I made it with my brother for the first time,it came out perfect my mum said:)
I love when you do traditional British baked goods. Definitely making this soon. Never heard of the egg weighing method, I'm intrigued. :) Thanks for the recipe, love your style, vids, and channel. Two thumbs up!
Just used this recipe for a 50th birthaday cake ( with your buttercream recipe ) she ended up with 3 cakes but said mine was by far the best ( especially the buttercream ) thanks for another go to recipe x
Following your recepie for a sponge due to my own recepie saying "just mix all the ingredients" .. thanks, makes me feel a lot happier baking for the first time. Well presented and structured vid..Hope you and the little black dogo are well.
Jemma! You've revived a childhood memory. Mrs. Mill's pound cake. She was our elderly neighbor who made this exact cake. I lost the recipe in a move. You have restored a culinary inspiration from my youth. Blessings ChefMike
i was very surprised about how loose the cream was. usually when i've had victoria sponge cakes in the past, the cream was alot more whipped, but this looked very good!
This is now my staple sponge cake recipe. Thank you again Jemma! ❤️❤️
I prepared this recipe and my hubby and I couldn't resist, the cake was gone in two days! And he is requesting it again ASAP!
Amazing! The best cakes I've made thus far. Thank you for the video with advice on what not to do and things to avoid.
I had a Victoria Sponge cake with buttercream in the Salisbury area some years ago. It was beyond delicious.
Tried the sponge cake and it came out great! Wonderful recipe! Love from Sri Lanka 🇱🇰
This is the best vedio to make a Victoria sponge cake I've seen. I followed this vedio and the results were amazing!!!
Mexican flag on the fridge!!
I'm such a big fan, Jemma. You are amazing and so are your delicious recipes.
Lots of love from Mexico! :)
Omg thanks for the recipe Jemma it was a huge success the cake tastes wonderful! Cant wait for more new videos!♥
I baked once with this recipe and once with chiffon cake and I liked with chiffon cake more. Very light with whipping cream
Thanks for this recipe it was really yummy not too sweet and the flavours go really well together! However I would recommend for people making this cake to tap the cake in the counter before baking because mine came out with air bubbles :) and watch the cake very closely and do not overbake it otherwise it can get a bit dry... But you can make more whipped cream to compensate :) I love your videos!!
Oh my goodness just tried this recipe and it is fool proof!!! So light and fluffy and delicious! Will keep this recipe as one of my staple best sponge cake id ever made thank you ever so much x
Just did this and oh my goodness!! Turned out amazing!! Thanks a lot for this recipe :)
Guys as a born and bred Brit (Hertfordshire but now Stateside) I can't stress how important it is to pop your ingredients into the mixer, DO NOT put your ingredients in, 'pop' them in. There's a difference!
Just tried it today! Tastes amazing omg! Thanks for the recipe :)
Can u please tell me the ingredients I checked it in the link but like I just don't understand how much things u need to put in like the amount of ingredients pls thanks
@@rooparajeev6327 Weigh your eggs. Weigh the same amount of sugar butter and flour.
Great simple ingredients , measurements just all I needed thx
She said that you should weigh your 3 eggs together in their shells. Then you should weigh an equal amount of self raising flour, sugar and butter
I love the classic Victoria Sponge Cake it has to be my favourite x
I made it! Turned out great! It went well with my homemade Thai gooseberry jam! Thanks Gemma x From Thailand
Can I use all purpose flour instead? Maybe add more baking powder?
I GOT YOUR BOOK FOR CHRISTMAS AND I AM OBSESSED!!!
The cupcakes taste magnificent marvellous
I love this! it's pretty easy to do and delicious as well! Do you use this for a layer cake? Or what's your favorite recipe for it?
sooooooo good light, fluffy and the butter smells amazing
I tried this, and it turned out great! Thanks, Jemma!
I actually cant wait for your book to be released!
Love this!! my son doesnt like sweet frosting have to try this !!! TY
Hi Jemma, my nine year old daughter and I love watching (and then trying) your videos/recipes. We were wondering, do you use cake strips? Or is that completely unnecessary? Also, do you mind posting what brands of cake tins and cake levelers that you use? Thank you for sharing!!
Amazing made it for a friend, so light! I'm now a whipped cream convert, instead of butter cream
Beautiful cake, tasted amazing and fluffy, mum loved it
I’m baking this for a gathering this weekend... looks delish!
Just viewed this and made one right along with it.... FANTABULOUS.
Made this cake for afternoon tea with the girls today. It went down really well.
Jemma could u plz plz do doughnuts and basic milk bread (or a wholegrain bread would also be great!!). Thanks in advance 😊😊
I feel the same about California strawberries. They are the best in my opinion.
I made this twice using this recipe and twice it was boom ting! Delish!!!
Wow, never heard of this way of measuring, tried it and loved it - thanks!
Once again Jemma! You’re amazzzzing!
Problem though...I have NO self-rising flour! Help please my Dear!
~Jules in Rhode Island, USA
Same here and i donno how much i need of baking powder
Ok. let's get this straight. So 150g/1 cup AP flour/plain flour + 2 tsp baking powder. Therefore if she wants both self raising flour AND baking powder, simply add 1 tbsp + about 3/4 tsp baking powder altogether.
Hi Jemma, Is this kind of cake that you use in all your buttercream cake decoration? If not, Which type of cake Do you recommend for a buttercream cake dripped chocolate or naked cake?
Well, just had a go at this recipe I wanted an easy bake to entertain my day off. Turned out really good. I like the fact the recipe quantities are determined by the weight of the eggs. Makes it very simple. Dont think could eat tones of it it is very swwet. But based of the facts my friend iv subscribed! 🍰 cheers Hayley (uk)
Jemma thanks for teaching so beautifully love the way you explain
Hey Jemma!
Is it possible to use this sponge cake recipe to do a "naked cake" or would you suggest using another type of cake?
I have the same question!!
I think you could I don’t see why not
Why do we weigh the eggs with shells on if we aren’t using the shell?
No wonder why my cakes have been so crunchy.
Hi Jemma, Thank you for sharing your videos so that we can be inspired to bake lovely things. I was just wondering if it is possible to make the Victoria Sponge cakes in advance and then freeze them and take them out the day that they are needed? All the best, Michelle.
British translation is as follows:
Vaniller = Vanilla
Spatuler = Spatula
P.s. I love your accent Jemma. ❤️😍❤️
Hi, I like your recipe very much, the cake turned out really beautiful and tasty. I'm sure except putting the vanilla extract in the batter, I've stuck to every step you said. Though I have a question about it. I wonder why the cake become stiffer after I put it in the fridge for one night. Is it too cold or something else? Thank you for making these amazing cakes and videos.
Hi Jemma
Just baked this cake and it was AMAZING thank u so much for the recipe oh and I just subscribed ❤
Just tried this recipe last week it's fantastic in fact we are making another one right now !!!
How did the second one turn out?
@@dylancarroll4623 The second one was amazing in fact it was even easier to make as I had gotten the hang of it.
Parvin Akhter good to hear.
Somebody needs to give Jemma a TV show. She's our generation's Nigella!

It's no longer summer, but I'm in the mood for backing 😆🍰
Made this and it's oh sooooo yummy! So summer-y! 😍
It looks lovely! Most people use strawberry jam but I like the idea of using fresh strawberries.
Hey, have you ever thought about the great British bake off! Would love to see you on the show!

Zarah 777 I'm pretty sure the GBBO is only for amateur bakers. I don't think you're allowed to compete if you are a professional
Tried this cake today.. came out so soft and tasty
Hi Jenna, made the cake and it was amazing. However because it was filled with whipped cream had to store in fridge after eating some and cake dried out. If you plan not to eat all at one sitting so u not fill the entire cake but just what you will have that day so that the rest of the cake can be stored at room temp in air tight container? Thanks jill In Brisbane Oz
How would you adjust the cooking time/temperature to make one thick 8" cake (to then cut in half) rather than two thin sponges?
It seems like wizadry to me to recalculate based on different baking tins! :)
2:34 "that weird spray stuff" lol Jemma uses it in her recent vids. great vid and ty
Yum! Can't wait to try this recipe. Thanks Jemma for sharing :)
