Kevin, I have an Excalibur Dehydrator. It's great for drying so many fruits and vegetables. Apples, pears, onions and especially herbs. I have so much mint. Would be great for parsley.

I'm thinking that putting the parsley in a lettuce spinner before you process it would help to dry it and then that would reduce the oven time. ??? Also, what about curled parsley? Would it work with that as well?

Instead of the silica gel pkt. couldn't you just punch a few tiny holes in the top to let it breath and dry out? Also, would it be good to store it in a dark cupboard? You have beautiful parley from your garden!

I am going to do rhis with Thai basil that is growing well in a container. It dies off late in the year.

I store the parsley in a jar in the pantry. Very convenient to have on hand!

Same method should work for basil. My only advice is to try a small batch of it first, just to make sure that you like the final product.

Preheat oven to 350°F. Insert tray of herbs, and then immediately lower the temperature to 170°F.

Dehydrated parsley will stay fresh and usable for up to 1 year. Enjoy!
I freeze my parsley in a Ziploc bag. When using it, taste just like I just picked it, try it!

I have dried parsley and find that it only smells like dry grass. Am not a fan
Dried parsley from the supermarket can be dreadful. When the herb is home-grown and home-dried, it is usually wonderful.
