    Great meatloaf! Made it for supper tonight with a few alterations. Used half a can of tomato soup (instead of broth) to mix with extra lean ground beef. Added diced onions and crushed soda crackersas didnt have panko. Cooked for 25 minutes with meatloaf fulled wrapped in foil. Added horseradish to the glaze for broiling after. Best meatloaf in years...thankyou from a new subscriber!

    20 mins high pressure
    10 min natural release
    - add glaze
    3-5 mins broiler

    I do dearly LOVE meat loaf and mashed potatoes. Thank you for providing your recipe. As for as your mashed potatoes are concerned, they're always BETTER with some lumps! One of the best things about the Instant Pot is that your can take out the meat loaf and the potatoes, leaving the liquid in the pot. Add a pound of baby carrots and then replace the trivet on top of the carrots and add an ear of corn on the cob for each family member. Can't have too many vegetables!

    I found it much more convenient to line my steamer basket for the instant pot with aluminum foil and then cook it. Came out great.

      Me either! We're having a record-breaking heatwave this September. I've really been using the IP to make dinner instead of the oven this summer.

      @@AMindFullMom hi what if I don't have red wine vinegar for the glaze. I don't want to buy it bc I won't use it for anything else

      @@lns4life You can just omit it! Or glaze the meatloaf with ketchup or BBQ sauce instead of making a glaze yourself.

      @@lns4life No need to purchase one ingredient if you won't use it again! Just use ketchup as your glaze, or mix in a little lemon juice or white vinega.

    I have an 8 quart Instant Pot and I am making this tonight. Would the liquid and time be the same? I also only have Russet potatoes on hand, so I'm going to have to give it a try with those. I am sure it will turn out great. All the recipes I've tried of yours have always been great! Thanks for sharing!

      I am ao happy to hear you enjoy my recipes Trisha! As for the cooking time and liquid--everything will remain the same (this recipe was designed for the 6 and 8 quart) I would suggest peeling the russets, but they will be delish!

    Can I use russets if that’s all I have? What’s the difference in cooking? 3:48pm Wed. 3/9 😊

      Hey Betsy! Just be sure to peels your russets. The mashed potatoes may be a bit more starchy from cooking in the broth, but still good.

      @@1htmma Different taste. Russets release a lot more starch as they cook, so you may want to drain your cooking liquid and mash with milk and butter. I just find it to be a bit gummy if mashing with the cooking liquid. And THANK YOU!

    Whoa…..wait. DO NOT cook directly on foil. Bad for you in so many ways…..including links to dementia. Use parchment paper between food and foil. Love all your recipes and adore you my friend. You have taught me sooooo much about my InstaPot!💕

      You could use a lid if your pan came with one (there are several pans made with heat safe lids for the Instant Pot) or you could try parchment paper.

    you could have gone 25 minutes and done a quick release and avoid the 10 minute natural pressure release

      That actually can result in tough meat, so I don't personally recommend that at all.
