    I just made three loaves, one with 4 yolks folded back in. As per one of Maria's other recipes, Protein Sparing Bread, I used 12 whole eggs, yolks separated, 1 cup egg white powder, half tsp salt, half tsp cream of tartar per loaf, baked 325 for 45 minutes. All three were perfect. Very satiating. Grilled cheese tomorrow. Scrambled eggs yolks (32 of them) are a delicious bonus. Thanks!

      @@jashmishlovesindia Darn, I forgot to mention the dried egg whites. I'll edit the post. Yes, 1 cup, per one of Maria's other recipes, Protein Sparing Bread. Folding it into the whipped eggs was a journey as it doesn't mix well and I was afraid of the whites falling. I sprinkled about 1/3 at a time between folding. The whites did not fall but I also didn't over mix, more like scatter since it doesn't dissolve nor stick to the whites. Next time I will try just adding it to the mixing bowl with my standing mixer running on slow. The "bread" tastes good fresh or toasted. It "reminds" me of Italian bread. Considering the glucose spiking store-bought Keto breads, I am now done with those.

      I have tried this so many time and still haven’t got it right! Throwing away all these eggs is so soul destroying.. at the moment we have a shortage of eggs due to bird flu down Sth… couldn’t even buy any eggs today. I whip till still peaks stand up not dropping, mix slowly in the powdered egg.. still goes like styrofoam! Any tips to can off would be most appreciated… I have watched all the videos over and over!

    I live in Toronto Canada and with the price of ingredients, this comes up to around 12$ a loaf unfortunately 😢 . It’s criminal how expensive the world is getting.

      Same! The egg white powder is nuts! I was hoping someone can make an alternative video? I’ve seen some RUclipsrs use fresh egg whites and cornstarch. It’s a mixed bag on flavour and texture and some reported that it deflates soon after.😔

      But let’s be real $12 a loaf now for several years will definitely be better than suddenly finding anomalies in your cell mutation due to all the crap they put in a regular two or three dollar loaf …. and then paying the hospital bill… not trying to be offensive in any way, just thinking through realities

      I found a egg and cream cheese only version. There's a nice version "cloud bread" that MyZeroCarb life done I've tried out it's nice
      The only thing is you get slices, not a whole loaf. 😮‍💨 but soo much cheaper!!! ❤❤❤

    The original recipe takes allulose powder right?
    I can’t have that so this version is better for me :) Thanks for coming up with a version that suits people sensitive to sweeteners :)

      You can leave out the allulose. It is just what browns the crust and gives a slightly smoother texture 😊

      I whip it on high until I get STIFF peaks. Time depends on what other brand ingredients I am using and the temperature or humidity at the time :)

    How long do you have to beat the egg whites? I used a hand mixer and after 15 min they still weren’t fluffy like yours?

      Until they are very stiff.

      2. Use real eggs and separate the whites. Carton egg whites are more likely to fall.
      3. Whip the heck out of them! Everyone under-whips the whites!
      4. Don’t use protein powders that have fat. Fat causes whites to fall.
      5. Do not touch the whites with any water. Not a drop.
      6. Don’t make it on a humid day unless you have AC. The whites will fall.
      7. Leave it in the oven after it bakes. I leave it in for at least 30 minutes.
      8. Slice it the next day when completely cool.
      9. Or try adding 1/4 cup more protein powder. Some brands are different.
      10. If it’s too stiff like styrofoam, do not whip a long time after you add the protein powder. You
      have over mixed the protein powder into the whites.

    Few questions….does it get crunchy in toaster and what does it taste like?? It looks so good. I’ve been upset to my tummy, and toast used to calm it down. Kind of missing buttery crunchy toast.

      Fold gently until just incorporated or mix on LOW until just incorporated. If you overmix the powder into the whites it will be like styrofoam 🙏

      No. If that happens you've either not whipped them stiff enough, gotten water or fat into the whites somehow, or it is too humid in your kitchen 🙏

      Allulose is what browns the crust and gives the bread a nice texture. The cream of tartar helps stabilize the egg whites so they do not fall :)

      Yes, but wait until you have whipped the whites very very stiff, then slowly re-incorporate the egg yolks or you will end up chewing on memory foam 😝

      A protein sparing day is a day that mimics the benefits and autophagy of extended fasting without losing lean mass by consuming a lot of protein and very little fat and carbohydrates. It is a method you can incorporate 1-3 days per week while significant weight loss is a goal :)

      Yes, I was confused as well. Like in a bread with less protein, but it is the other way around, a bread that keeps your body from taking protein from your muscles by a "bread" with high protein. Like doing the 3-day sardine "fast". Gets you into super ketosis (my ketones went from 0.5 to 2) and reducing glucose (my glucose went from 100 to as low as 60, but 75 ave) while not being hungry at all on about 500 calories a day.

    Turned out OK for me but the base of the loaf, inside the pan shrunk in a lot and collapsed some. I left it in the pan in the oven to cool. Should I have done something different?

      2. Use real eggs and separate the whites. Carton egg whites are more likely to fall.
      3. Whip the heck out of them! Everyone under-whips the whites!
      4. Don’t use protein powders that have fat. Fat causes whites to fall.
      5. Do not touch the whites with any water. Not a drop.
      6. Don’t make it on a humid day unless you have AC. The whites will fall.
      7. Leave it in the oven after it bakes. I leave it in for at least 30 minutes.
      8. Slice it the next day when completely cool.
      9. Or try adding 1/4 cup more protein powder. Some brands are different.
      10. If it’s too stiff like styrofoam, do not whip a long time after you add the protein powder. You
      have over mixed the protein powder into the whites.

      Yes. It is what gives the bread it's fluffy texture. Otherwise, it will just be meringue.

    So you're basically just eating salted egg white. This can NOT taste like bread! Also, in Europe, there is no way you're going to find egg yolks in a carton or dried egg yolks in powder form! Certainly not in any supermarket I've seen here or even a health food shop!

      This recipe doesn’t call for egg yolks. And it is delicious and is a great bread substitute for those who cannot have gluten or grains for medical or other reasons 🙏

    He'll no ,you still have gluten ,from the moment you said only egg white .why do you think egg is white and yolk.please do not separate them if you want gluten free the yolk is the buffer of the white and has more nutrients.

    You dropped half of your sandwich
