I just made three loaves, one with 4 yolks folded back in. As per one of Maria's other recipes, Protein Sparing Bread, I used 12 whole eggs, yolks separated, 1 cup egg white powder, half tsp salt, half tsp cream of tartar per loaf, baked 325 for 45 minutes. All three were perfect. Very satiating. Grilled cheese tomorrow. Scrambled eggs yolks (32 of them) are a delicious bonus. Thanks!

Next time I will try just adding it to the mixing bowl with my standing mixer running on slow. The "bread" tastes good fresh or toasted. It "reminds" me of Italian bread. Considering the glucose spiking store-bought Keto breads, I am now done with those.

I found a egg and cream cheese only version. There's a nice version "cloud bread" that MyZeroCarb life done I've tried out it's nice The only thing is you get slices, not a whole loaf. 😮💨 but soo much cheaper!!! ❤❤❤

Yes, I was confused as well. Like in a bread with less protein, but it is the other way around, a bread that keeps your body from taking protein from your muscles by a "bread" with high protein. Like doing the 3-day sardine "fast". Gets you into super ketosis (my ketones went from 0.5 to 2) and reducing glucose (my glucose went from 100 to as low as 60, but 75 ave) while not being hungry at all on about 500 calories a day.

So you're basically just eating salted egg white. This can NOT taste like bread! Also, in Europe, there is no way you're going to find egg yolks in a carton or dried egg yolks in powder form! Certainly not in any supermarket I've seen here or even a health food shop!
This recipe doesn’t call for egg yolks. And it is delicious and is a great bread substitute for those who cannot have gluten or grains for medical or other reasons 🙏

I whip it on high until I get STIFF peaks. Time depends on what other brand ingredients I am using and the temperature or humidity at the time :)

How long do you blend the egg white protein into the egg whites?
Fold gently until just incorporated or mix on LOW until just incorporated. If you overmix the powder into the whites it will be like styrofoam 🙏

No. If that happens you've either not whipped them stiff enough, gotten water or fat into the whites somehow, or it is too humid in your kitchen 🙏

They are optional additions. You do not need to use them if you do not want to :)

Allulose is what browns the crust and gives the bread a nice texture. The cream of tartar helps stabilize the egg whites so they do not fall :)
