Instant Pot Chicken and Rice

  • This recipe for chicken and rice in the Instant Pot makes an excellent quick, kid approved, weeknight meal. The rice turns out just right and the carrots are cooked through yet not mushy. It pairs very well with Sriracha chili sauce for a little kick. This recipe will work fine with any other electric pressure cooker brand as well. Enjoy!
    2 Pounds Chicken Thighs ( I prefer bone in/skin on)
    1 large onion diced
    3 carrots diced
    3-4 cloves of garlic (I always end up wishing I put more in)
    1 TBS Paprika
    2 tsp Tumeric
    2 tsp Cumin
    2 tsp Oregano
    2 tsp salt
    1 tsp pepper
    2 cups frozen peas
    2 cups water
    2 cups Chicken Broth
    3 cups Rice

    I made this with some changes. Added some celery and chopped mushrooms. Use boneless, skinless chicken breasts and on top of them added cream of chicken soup. Very tasty think it might have been better if I had used cream of mushroom. Like your site.

    In one of your videos you have a link explaining the Maillard reaction. You missed a "golden brown" opportunity here to brown the chicken thighs first, on both sides, then remove from the pan and pickup where you started. Build that flavor, layer by layer.

    You should always add 2 cups of water per 1 cup of rice .mine ended up in my crock pot.

    Can I use brown rice?

      I haven't tried it yet but..... Brown rice will take a bit longer to cook through. If you want to experiment I would try 18 minutes cook time with the same release. Let me know how it goes if you try it.

      Definitely, the chicken will be drier though, that's why I prefer chicken thighs. It will cook for the same amount of time.

      I used a short grain rice and I think the burn message I got was because of the rice. After two attempts I changed over to slow cook food was saved to be eaten another day the house smells divine great spices …that’s the beauty of the instant pot. But it is also the first burn message In almost seven years of using the instant pot. At least I was able to do something instead of tossing the food or putting it into a pot and cook on the stove. This way it never left the instant pot.
