    I halved the recipe to fit a 6-inch pan (used 2 eggs) and it was SO GOOD!! Rather than using store bought jello, I dissolved 1 tsp gelatin in 1.5 tbsp water then added it to 1/4 cup mango purée. Just a minor thing I noticed though, the cake was a bit dry. Not sure if there's any specific cause, but I'll try soaking it in more mango nectar next time.

    I made this and it was a big hit.. I love mangoes and love this recipe. thank you. My sponge cake rose quite well that I was able to split it into two and make a layered mousse cake. It was delicious!
    do you think ill be able to make this in cupcake form (bake sponge cupcakes and then fill with the mousse)?

      So glad it was a hit! :) I think that would be a great idea, too! You can even use small glasses and assemble the dessert into parfaits :)

    Hi Tatyanas, thanks for the recipe. It took me 3 times to get to perfection. Because you did not mention to add the hot gelatin into the batter. So I waited for some time and than added, it got lumpy.
    Than I watched the video 2nd time and u did not mention, so I added the hot gelatin and mixed it. Thanks it turned out good. I wish I could send you a picture.!!! 😊😊

    Hello, I would like to do a twist please let me know if this will work fine. I want to use this recipe but make the mango cake the same way you did your lemon cake… should I stick to the sponge cake recipe or Vanilla cake you used in the Lemon cake recipe?!

      Hi Judy! Yes, you can make it ahead of time but I recommend keeping it in the refrigerator. I'm not sure how well it would freeze but it will be great in the fridge for even 4 to 5 days. Just keep the cake in the spring form pan!

    Hi, can I just use mango juice for the mousse? we don’t have that kind of mangoes here in Scotland and the mango here is not good it’s a bit sour

      Can you find mango puree? That would work better. I think juice would be too thin

    Hi, I tried making it and it turned out pretty good. however , the mousse part was too runny. I used agar agar instead of gelatin. I think my measurement for agar agar wasn't right. can you please tell me how much water and agar agar to use to get the right consistency. I want to try it again. thanks

      Hi! Sorry that your first attempt didn't work well! Try using 1 tablespoon agar with 1/3 cup water. You'll need to cook this mixture in a small saucepan until the mixture thickens, then add

    My cake became very loose and it started falling apart. My mousse part was fine before I put the gelatin and after that despite it stayed in the fridge it did not become harder and after putting the gelatin top layer, when I checked it in the morning, gelatin was leaking from the pan. When I cut a piece it was like melted. Do you have an idea why this occured. I am thinking it could be that I put a lot of water in the gelatin, but I did one cup hot water and one iced. According to the package.

      I'm so sorry that your recipe didn't turn out well! For the top gelatin layer, I used half the water recommended on the package. So if your package recommended 1 cup, I would use 1/2 cup next time. Hope your next attempt is more successful

    You can allways use mango juice and add gelatin to it. I do it all the time, it tastes great. I am defenetly trying this cake. Sorry for my english not beeing so good. :)

    what did you do for your liquid to not leak through the bottom of the pan?

      If your pan is leaking, unfortunately it's time to get a new one. The pan will leak when the rim has been bent out of shape. I always take extra care washing and storing my spring form pans; they can get ruined very easily

      Glad you enjoyed it! For the top jello layer, you can use mango but for the mousse layer, I would stick with unflavored. The amount of gelatin may be different...

      Make sure to remove it before you assemble the cake! Once the sponge cake cools, turn it over and peel off the paper, then make the cake :)

    What's the ingredients of the jello garnish layer exactly?

      Hi! The jello layer is just jello but prepared with less water to ensure that it sets firmly. I recommend using half the water required per package instructions. For the fruit, I used dragonfruit, blueberries and raspberries.

    Hi Tatyana I need help please! I'm trying to make this cake but every time when I dissolve the gelatin and then add it to the mousse mixture it goes bitty and lumpy instead of incorporating into the mousse. What do you think I could be doing wrong? Is it maybe because the gelatin mixture was still hot when I added it? Should it be completely cooled before adding? Thanks!!

      Hi Jessica! So sorry that keeps happening. The gelatin should be hot when you add it to the mousse. What you can try to do is temper it into the mousse. Set aside about 1 cup of the mousse and whisk the gelatin into the mousse as you're pouring it in. Then fold this mixture into the rest of the mousse. Hope that helps!

      @@TatyanasEverydayFood thanks for the reply Tatyana! So strange because the gelatin was hot when I added it to the mousse. I even tried it with agar agar and the same thing happened. Such a shame because the mousse tasted delicious, but I'll try your suggestion of tempering it another time.

      Make sure to let the mousse cake set first, then add the Jello layer.
