How to make multicoloured or rainbow icing swirls | Clean Easy Technique!

  • Welcome to my tutorial on how to pipe icing with multiple colours or rainbow icing swirls. It's the best-kept secret in the industry and you'll keep your piping bag clean for the most part. Once you learn this secret your icing colour horizons will open forever and you'll be experimenting with all different colours in one bag.
    You can use your favourite icing recipe or use my recipe below. This recipe makes enough icing for 1 1/2 dozen cupcakes. All recipes in metric and US measurements.

    RECIPE
    Cream Cheese Icing
    250g (1 1/4 cup) Cream Cheese
    125g (1/2 cup) Butter (room temp)
    525g (4 1/2 cups) Icing Sugar (powdered, confectioners)
    1 teaspoon Salt
    1 teaspoon. Vanilla paste (or essence)
    3 food colours
    METHOD
    Cream the cream cheese until light then add the room temperature butter. Cream on high until light and fluffy (almost white in colour)
    Add the icing sugar in 3 lots, mixing on low to start then high until fluffy again
    Add salt and vanilla, mix until combined.
    Divide icing into 3 x 300g bowls. Add colour to each bowl and mix until desired colours are reached.
    Lay out a piece of plastic wrap longer than your piping bag.
    Put all three colours alongside each other along the length of the plastic wrap leaving some room at both ends - grab the short ends of the plastic and make a cylinder (sausage) out of the colours - tie one end and leave the other end open.
    Don't forget to put your piping tube inside the piping bag then insert your icing cylinder into your piping bag - open end first.
    Secure your bag at the top with a twit and you're ready to pipe your cupcakes or cake!
