Coconut Cheese / Fudge || Caribbean Sweet Treat

  • Welcome Back To My Kitchen !! And today we are making some Coconut Cheese
    Coconut cheese is one of our favourite sweet treats on the islands and I decided to try and make it so sharing with you all how I got it done.
    I came across this recipe online and not sure if this is how it is generally made on my island but I am definitely going to keep trying this because I still think it could have come out so much so much better hahaha
    But for now, here is what you will need in order to make this sweet and delicious treat

    Ingredients List:
    2 cups fresh coconut milk
    1 cup light brown sugar
    1 can sweetened condensed milk
    1/4 tsp nutmeg
    1/4 cinnamon
    1 tsp ginger (or 2 if you like ginger)
    1 tbsp butter
    1 tsp vanilla essence
    The beating takes at least twenty to twenty-five minutes so monitor closely and remember just keep beating haha

    Nice to find a new recipe. Last time I tried making it -it was too sweet and was basically a coconut rock. Will be trying this 🇩🇲🇩🇲🇩🇲🇩🇲❤️

    Love coconut cheese . You did an excellent job. I use to eat coconut cheese when I was growing up in Dominica

    My recipe is similar. The only thing I don’t add is the butter. It is a lot of stirring. I make different flavors and sell them locally and online. Love this video

    I just tried this recipe today and I'm very happy with the results. It would have been nice to know the details of the heat level. I guessed at high heat and that seemed to have been it. Will surprise my mother with these. I do also have a question, why vanilla essence and not extract? Essence is synthetic and almost never has any of what makes vanilla, vanilla. I substituted extract instead of essence. Thank you for posting this how to.

      The essence was available at the time but the extract will for sure be better 🍴

    All that mixing can you use a hand mixer instead?

      It's normally done by hand so not sure how well it would work with a mixer

    Is there a dairy-free option I can use to substitute for condensed milk?

      Hi. They make sweetened condensed coconut milk. If you want to cut the sugar you can also try coconut cream.

    Does it matter if the butter is salted or not?

    I added peanut butter instead of butter and left out the condensed. milk

    Never knew it could be so simple to make! Can you use canned coconut milk for this as well?
