How To Make Trini Coconut Fudge | Foodie Nation

  • One does not simply visit Tobago without enjoying some Coconut Fudge:
    Yield: 12 to 15 Portions
    INGREDIENTS
    2 Cups of Coconut Milk
    2 Cups Brown Sugar
    14 Oz Condensed Milk
    ½ Tsp Almond Extract
    1 Tbsp Butter
    METHOD
    1. Prepare an 8 x 8 inch baking tray by lightly lubricating with butter or oil and lining with grease-proof paper.
    2. Place a medium non-stick saucepan on high heat. When hot, add in the coconut milk, brown sugar, and condensed milk.
    3. Mix well until the sugar dissolves. Once ingredients liquefy and begin to bubble rapidly, begin to stir continuously to allow the mixture to reduce in quantity. This may take about 20 minutes to thicken up and reach to desired temperature of 240 degrees Fahrenheit. (Use a candy thermometer to measure this)
    4. Once mixture is thickened and reduced in consistency where the color has developed a deep blonde shade and registers to firm-ball stage (240 degrees Fahrenheit) remove from heat and stir in the almond extract and butter.
    5. Continue mixing with a spatula to induce aeration until the glossiness of the batter has diminished and fudge takes on a smooth matte finish. This can take up to 3 minutes.
    6. Once you have acquired the matte finish and mixture has thickened up but still pliable, pour into the lined baking tray and smoothen the top of fudge with a spatula or with lightly greased hands to create a clean top and finish. Let sit for 5 minutes, then with a small sharp knife, cut through the fudge to make blocks while still semi soft. These pre-cut blocks will be the portions of fudge when it hardens.
    7. Let sit for up to 2 hours at room temperature or in the chiller to expedite.
    8. When fully solid, remove fudge from the tray by peeling off the grease proof paper and serving the blocks with tea, coffee or as a simple sweet dessert.

    So I cooked my fudge to 240F and let it cure on wax paper for 24 hrs. Turned out hard and chewy like toffee. It stuck to the paper - I was annoyed 🙄 then I tasted it. Delish! Even ate the paper, figured I could use the fiber 🤔

      Ha Ha - Addictively delicious fudge, but there are better sources of fiber. You need arms of steel like Kezzianne.
      For tender fudge you must stir fudge when cooling until you see the surface texture change from gloss to flat. This is when the sugar crystals that make fudge tender are forming and separating from the fats which, once the fudge sets, will help the fudge slip from the waxed paper. If you still have sticking, try warming the back side of the paper with your hand. It may help it come apart.

      I want to make it with coconut milk powder, coconut cream powder and coconut sugar. Coconut cream would be a good liquid base. Also might need to heat the c cream & c oil first then add the sifted powders and use vanilla paste. Won’t be the same but there must be a way.

    I haven't eaten Trini fudge in decades. I made it once or twice. It was a long cooking production, but the fudge was eaten in no time. My sister was the fudge maker in the family.

    Jeeeeeezzzz zusssss. All yuh my right hand numb especially my fingers. Then when I try mixing with my left left which I'm not accustomed to using, I had to switch back to right hand. So that right hand right now needs a vacation. But listen y'all are bomb. I did have to improvise with coconut milk powder though but all good. Thanks so much for sharing.     I made the fudge and added a cup of sweetened flaked coconut after processing it in my food processor i must not have cooked it long enough as it only will maintain it's shape refrigerated. It is very nice thank you for this video .... delicious

    as a child when in Tobago we will get all the sweets at the airport to bring home and yes I had loved the fudge and sugar cake but my thing was the peppermint that pink and white swirl mint was my fave. now as an adult whenever I hear Tobago that peppermint comes to mind and no one seems to be making it anymore I really do miss it

    You need to have shown the fudge semi set and it being cut or scored then see it being sliced when set. Do you put aside or fridge it. You need to add this to your video. Haven’t seen any recipes that don’t show the whole thing

    I just finished making this I don’t know if it’s because I used coconut milk powder in two cups of water but I had to stir for 40 minutes before it came to 240. It set pretty fast and taste great but lord that 40 minutes of constant stirring and heat nearly killed me
