    Ingredients:
    3 ½ cups self rising flour
    ¼ cup fine granulated sugar
    4 ounces of margarine
    1 egg
    1 ½ cups milk
    Recipe:
    In a large bowl combine flour, sugar, and margarine.
    Using clean hands and fingers, crumble the mixture into a breadcrumb texture. May take two minutes. Be sure to mix lightly and airy.
    Wash hands.
    Using a wooden spoon, make a well in the center of the bowl.
    Pour almost all the milk mixture (leave a little amount to brush on top of scones later) into the well.
    Using the wooden spoon, mix from the edge to the center all while turning the bowl as you go.
    As soon as the dough is combined, stop. You don’t want to overmix. Using the wooden spoon, scrape the edges of the bowl and form the mixture into a ball in the center of the bowl.
    Sprinkle flour on top of your work surface.
    Tip the ball of dough onto the flour surface. Be sure to get all the dough in the bowl.
    Sprinkle a little flour on top of the dough ball so it’s not too sticky.
    Using your hands, quickly pull the dough ball around in circles and make a smooth ball.
    If there is flour on the top surface of the dough ball, you can brush it off.
    Flip the dough ball onto the other side. Brush off any flour that’s on top.
    Using your hands, turn the dough ball to form a circle and pat the dough ball down as you turn it to form a circle 1/2” thick. Do not press firmly. You want to keep the dough airy.
    Prepare a cookie sheet. If your cookie sheet normally sticks, use a non-stick spray.
    Using a round cookie cutter or the rim of a round glass, cut out biscuits.
    Be sure to tap the cookie cutter into flour first, tap off the excess before you press and make the circles. Put each biscuit onto the baking sheet. Place the biscuits about ½” apart.
    This recipe makes 12 biscuits.
    Use a brush, and with the left-over milk mixture, brush the tops of the biscuits liberally with the liquid.
    Bake on 425 degrees for 12-15 minutes.
    Serve warm.
    Serve with Irish butter, jam or honey!
