Also, the type of vanilla used may have an effect on taste. As a gift I was once given a nice bottle of pure vanilla from one of the Islands in the Caribbean (Dominican Republic, I think). It tasted different from what we are used to - good, but different. Which was ok. Still used it up on recipes I thought it would compliment.
You also have to be careful with additional salt in your recipes if you use either baking soda or self rising flour. It's also best to use unsalted butter if one of those are at play.
You can never really replicate exactly what a company makes because it depends on all types of factors like :humidity, room temp, oven, type of ingredients, brand of ingredients, how long each type of ingredient is in their fermentation. All factors take a play but besides that I love you and are so sweet and you just have this mother goose energy that I love.

I just cooked the Stone Cookies using some adjustments: * I used metric measurements (no conversion, just literally 1 Imperial cup for 1 metric cup etc). * I used butter instead of shortening * I used coconut milk instead of evaporated milk (I didn't have evaporated milk on hand) * I used baking powder instead of baking soda. * I added only a teaspoon of table salt. * I had small eggs, so I added 2 eggs to the wet mix before blending in the flour. The result was a beautiful smooth dough, very easy to work with, like a good sugar cookie dough. I was able to roll it into a large squarish sausage in parchment paper, and I cooled it in the fridge before slicing it up, rolling into even balls, and then flattening slightly before baking in the oven for 25 mins. Amazing! I know it's not the same as the original, but the dough left a clean bowl when I mixed it by hand, which usually is a sign that one has used the right amount of ingredients. They did not brown at all! Very pale, almost like a sugar cookie, and did not spread (the extra egg?). It tasted bready and not too sweet. I think next time, I would add more fat (butter or shortening), and omit the egg. I think if golden syrup was added to the butter and sugar, you'd have a definite crispy crunchy cookie.

Bear in mind that the humidity in Hawaii is probably much more than Rhode island so you're probably going to need to increase the moisture in the recipe (like you did with the extra milk but possibly even more if you were in somewhere even drier)

You should do St. Paul’s sandwich. Its a St. Louis thing. Fits as a “hard times food” as it is often hard to find in good times and has always been basically the cheapest thing on the menu at St. Louis chinese restaurants (when times are bad). Its also a wacky sandwich!! 2 slices of white bread, slathered in Mayo, filled with 1 egg foo young, 2 pickle slices, and sometimes a slice of tomato and a lettuce leaf. Enjoy!

It's a poorly written recipe but after adding egg, milk, etc it says to add the flour (it should really say "flour mixture" since you previously mixed the cream of tartar with it).

I think you should have blended the sugar and shortening together and then add condensed milk to start. The order of ingredients matters when you are baking something.

The storebought versions of the cookies reminded me of the "lembas" bread that I made a while back, where I baked a smooth dough to cook it and then baked again to dehydrate it and make it crisp.

I've made these before and my grandpa used to love them! We called the cement cookies and I added chocolate chips. He grew up in the depression era and always loved them.
I remembered my mom having these cookies and dunk it in her cookies. Mt view bakery is a local small bakery. They make the best homemade danish and also mochi donuts!

Emmy, you should try the African and/or Haitian mud biscuit. Its actual "clean" mineral dirt, butter and salt mixed and allowed to dry. They have been eaten traditionally for hundreds of years. Some believe the minerals in the dirt are good for the body. Many pregnant women consume them. They are eaten in hard times to combat hunger but some people eat them due to tradition.
Here in New Zealand, we have a hard biscuit (Cookie) called a Ginger Nut, that could originally almost chip a tooth. The modern version however sold by Griffins is a bit smaller and softer than their original. With some biscuits (cookies) like that you normally put them in the freezer for a bit to get the outside golden and the inside lighter when baking.

Its probably the extra egg and the baking powder, powder is more for caky texture and soda for cookies. 😊

We made those for church!! You gotta sift the dry ingredients for them to not lump.
Whisking/sifting the dry ingredients will do the same thing. All you are doing is removing lumps by incorporating air into the flour.

I think you should have blended the sugar and shortening together and then add condensed milk to start. The order of ingredients matters when you are baking something.

I’m from Big Island where I’ve lived most of my life and I’ve literally never heard of these cookies ever. Maybe it’s just a Mountain View thing?? But also these sound like, flavor profile wise, like diamond head bakery royal creme crackers- which are phenomenal in their simplicity
Kona coffee is so glorious. I wish it was easier to find and cheaper everywhere else but Hawaii.
We have these in the Dominican Republic we dip them in coffee too, or eat them with slices of cheese, and salami, or sometimes cheese, and guava paste.

If you want to put a new handle on the pour-over coffee maker, most craft stores have replacement ceramic that you can use to mold a new handle and then bake to set.

The cookies are hard but they taste so ono. They are great with milk, coffee, or tea.
I've made these before and my grandpa used to love them! We called the cement cookies and I added chocolate chips. He grew up in the depression era and always loved them.

Emmy, you should try the
African and/or Haitian mud biscuit. Its actual "clean" mineral dirt, butter and salt mixed and allowed to dry. They have been eaten traditionally for hundreds of years. Some believe the minerals in the dirt are good for the body. Many pregnant women consume them. They are eaten in hard times to combat hunger but some people eat them due to tradition.

Here in New Zealand, we have a hard biscuit (Cookie) called a Ginger Nut, that could originally almost chip a tooth. The modern version however sold by Griffins is a bit smaller and softer than their original. With some biscuits (cookies) like that you normally put them in the freezer for a bit to get the outside golden and the inside lighter when baking.

Grandma's are great they give you coffee as kids w/cream n sugar too.
Try them w/Kona coffee or even hot chocolate!!
