- Try Rick's Madras fish curry - a very easy and fresh dish inspired by his visit to Tamil Nadu in India. Using fillets of sea bass in place of the traditional snapper, cook this simple but delicious dish for a weeknight supper or as a showstopper for a dinner party.

One of my favourites. I've been making this regularly since your India series. Simple and never fails to impress
This seems like our traditional fish curry cooked by South African Indians. We may add slices of green mango or brinjal.
What happend to the curry leaves?
I’m definitely going to cook that
I’ll make that the weekend. Cheers Rik
Wash the rice it makes a massive difference

Well that looks like a yummy dish...with one exception. I'm surprised Rick chose sea bass. This is a highly overfished and now commercially threatened species. You're so knowledgeable. Please select nice other fish, maybe cod, haddock, pollock, etc. Love your skills.
Looks so tasty! Thanks for sharing! 👍😁🏴
Greatest ever ! Rick sir please comeback soon to tamilnadu again .

very original apart from a hygienic british kitchen
BASS. Thank you, Rick! At long last a professional calls bass "Bass". Not sea bass. What do they mean "sea bass".... as opposed to what, rugby pitch bass? Sea bass is just a café come-on term, which has unfortunately made its way onto almost all menus, even the Savoy. We don't call cod "Sea Cod". I'm getting old and crotchety.
I feel the same way about Americans and their "Tuna fish"!
Is there "Tuna chicken"? It's just Tuna.
There are fresh water bass too. In the UK that is the perch, but in the US a bass is a fresh water species.
Just as there are sea bream and fresh water bream.
If the public realised just how good an eating fish a perch is then there wouldn’t be many left, the Swiss know only too well and would choose perch over trout any day. I remember fishing with locals in the tropics and we deep fried the baby perch we caught, simply delicious.
