Ingredients for potato masala
2 - 3 tbsp ghee
1 tsp cumin seeds
10 curry leaves
1 onion - finely chopped
2 - 3 green chillies - sliced into rings
1/2 teaspoon turmeric
2 potatoes - cut into cubes
1 tbsp garlic and ginger paste
Water - enough to cover and cook the potatoes
Salt and pepper to taste
3 tbsp chopped coriander
1 tsp chilli powder (optional)

Love the blooper at the end! Going to have add this to list. Had some wonderful masala dosa in Bahrain and would love to recreate that flavour. What’s the big pan called out of interest? Is it a massive tawa? Thanks!
