This example of clay pot cookery is wonderful. I fell in love with Tangine and Tangia dishes in Morocco last year. It is definitely a skill and the food is delicious. I am going to attempt the green bean curry today. Thank you so much for sharing your travels and food with us!
Wow, these look amazing!👌 Can't wait to try them. Cheers 👍

Absolutely love Sri Lanka and their curry’s. Went over to Galle, Kandy and Columbo for the cricket test series against England in 2012. Lived on curry’s every lunch break in test matches in Galle around the Dutch Fort👍👌 stunning country with the most hospitable people❤️
Just one thing - that thing you refer to as leeks is actually pandang leaves (rampe).
No. There were leeks and pandan leaves. They used both. :-)
I’m Sri Lankan and always use ‘Rampe’(Pandan leaves) at the stage of Sauté-ing. Never used Leeks as it doesn’t provide the beautiful flavour provided by the Pandan and Curry leaf combinations 😊.
The look more like lime leaves than curry leaves
