I made this today. It's pretty rubbish. Extremely fatty tasting. There's no point in using the more expensive pasta in this recipe because you can't taste it. Not much flavour either. All you taste is the mild ricotta. Terrible recipe. Also there's no need to mix the cheeses in the bowl. Put straight into the sauce along with the pasta water
I’ve just made this and am about to serve it up, it’s DELICIOUS. Also for anyone who likes to follow Vincenzo’s recipes to the letter, elicoidali is (as far as I can tell) the same as the tortiglioni shape sold by De Cecco (and Barilla, but do yourself a favour and buy the De Cecco or better if you can)
I make this about every 10 days. I think I told you before that sometimes I make it with cherry tomatoes instead of the passata. It's one of my favorite dishes since childhood. My mother and grandmother would often make it for lunch, especially in winter. Now that I found an Italian deli with fresh ricotta i am enjoying this even more. I wish I could find sheep ricotta, but that's not happening in a cow state like Wisconsin. We are having this wednesday :)
@@jacmar16 It's similar to the way Vincenzo made the cherry tomato pasta with the marscapone. I usually use2 pints of tomatoes and cook them down until they make a sauce. Sometimes i use one pint and a bottle of passata.
Mascarpone also works well for this, I do a version where I add a tablespoon of Mascarpone per person to the Tomato Passata goes salmon pink and is very rich and creamy 😋

the thing about not chopping the basil is simply a myth - completely not true. Actually when you tear it with fingers all the aroma and flavour remains on your fingers. The knife(if sharp) slices it with less force than your fingers ripping it... so do cut your basil - it's actually better

Knocked it out of the park. Used shallots rather than white onion. Cooked up beautifully in true Vincenzo style. Super rich and so tasty. Had it with broccolini rabe, steamed with lemon pepper. So good and easy to make. Pasta used durum penne rigate.

Good evening! We tried this recipe tonight. It was delicious! It turned out just like it looks in the video. It's so rich! I don't think we can do this weekly! But we'll be keeping this one for the next time...maybe with some red pepper flakes next time.

My favorite will always be Amatriciana but this is something I must try. Dead simple, readily available ingredients,... and I do like using the larger pastas, (particularly penne rigate). We now have a shop here that does make fresh pasta and between the two major supermarkets here, we also have several top quality dried pasta brands to choose from.
Sorry Vincenzo, I’m a big fan but this one isn’t as good due to the passata. It’s the first time I use it and I can feel the industrial flavour it brings to the table unlike the simple sauce introduced earlier consisting of just garlic, tomatoes and basil which was just perfect.
This is totally simple comfort food. No need to get fancy. Barella rigatoni will do. And Mutti passata will do. Any onions and garlic will do. But I do need some fresh basil.

I got a similar recipe for this from a meal kit, only it included pork sausage, used penne pasta, but also used cheap substitutes like tomato paste and cream cheese. I've since modified my recipe to use a turkey Italian sausage (personal choice, to get more protein), tomato passata, and ricotta, and OH it's so much better!!

I do you one turn better. I make my own ricotta. You should really consider doing that as a recipe. It's very easy to do. If you come by milk at a good price, it's so simple. My favorite dish as a kid is natural to my heritage, Polish. Kluski z Kapusta, or noodles and cabbage. It is what it claims to be. Pasta, noodles, lots of butter, Sometimes bacon was added, but I never really minded if it was added or not. My family made it with macaroni, which I think is just a matter of taste and preference. The original would've been made with egg noodles.

What are the measurements for the passata? I can’t find a bottle of it only packs of 500ml

I accidentally bought Ricotta Cremosa which made it EXTREMELY creamy. My 6 year old loved it, he ate an entire plate. Next time I'll make it with 400 grams of pasta I think since I had so much sauce.

I made this today and it was a big hit. Lots of sauce!
I got a similar recipe for this from a meal kit, only it included pork sausage, used penne pasta, but also used cheap substitutes like tomato paste and cream cheese. I've since modified my recipe to use a turkey Italian sausage (personal choice, to get more protein), tomato passata, and ricotta, and OH it's so much better!!

Yep sometimes simple is just better. I made his spaghetti sauce and it was amazing. I'll probably get killed for it. But I added a half roasted red bell pepper.
I do you one turn better. I make my own ricotta. You should really consider doing that as a recipe. It's very easy to do. If you come by milk at a good price, it's so simple.
My favorite dish as a kid is natural to my heritage, Polish. Kluski z Kapusta, or noodles and cabbage. It is what it claims to be. Pasta, noodles, lots of butter, Sometimes bacon was added, but I never really minded if it was added or not. My family made it with macaroni, which I think is just a matter of taste and preference. The original would've been made with egg noodles.
