    Let's make Ramadan sweeter with delicious Qatayef!
    Qatayef dough:
    4 cups warm water
    1 cup semolina
    1 tablespoon instant yeast
    1 tablespoon sugar
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    2 cups flour
    How to prepare:
    1. In a large bowl, mix warm water, flour, semolina, sugar, baking powder, baking soda and salt.
    2. Gradually add warm water, whisking constantly, until you have a liquid mixture that resembles the consistency of cake.
    3. Cover the bowl and leave it in a warm place for at least an hour until the dough ferments.
    4. Heat a non-stick frying pan over medium heat.
    5. Grease the pan with a little vegetable oil.
    6. Pour a tablespoon of the dough into the pan. Make sure the pan is hot before pouring the dough
    7. Gently move the pan until the dough is distributed in a circular shape. Do not leave the Qatayef in the pan for a long time so that it does not become dry.
    8. Leave the Qatayef until it is cooked and bubbles appear on its surface.
    9. Turn the qatayef on the other side and leave it until cooked.
    10. Remove the qatayef from the pan and place it on a plate to keep it warm.
    Filling:
    1 cup nuts
    1/2 cup sugar
    How to prepare:
    1. In a small bowl, mix nuts and sugar.
    2. Stuff each plush with the stuffing mixture.
    3. Fold the qatayef into a semicircle.
    Honey:
    2 cups of sugar
    1 cup of water
    Juice of 1/2 lemon
    How to prepare:
    1. In a small saucepan, put the sugar and water over medium heat.
    2. Stir the mixture until the sugar dissolves.
    3. Leave the honey until it boils.
    4. Add the lemon juice and leave the honey to boil for 5 minutes.
    5. Remove the honey from the heat and let it cool.
    6. You can add rose water or orange blossom water to honey to add a distinctive flavour.
    Submission:
    1. Place the stuffed qatayef in honey.
    2. Garnish the qatayef with pistachios or crushed pistachios.
    3. Serve the qatayef warm or cold.
    advice:
    You can use any type of filling you prefer, such as cheese, cream, nuts or fruits.

    This recipe makes enough to make about 20 plushies.
