Pumpkin Coconut Milk Steamed Cake (No-egg Vegan Recipe)

- Healthy and delicious, made of pumpkin & coconut milk, soft and slightly chewy, no-egg, vegan steamed cake recipe. Just mix and stir all the ingredients evenly, really easy to prepare at home. Try it if you like 😋
Ingredients:
150 g Pumpkin (peeled)
140 g (1 cup) all-purpose flour
60 g (½ cup) tapioca starch
60 g (¼ cup) sugar
1 tsp (3 g) instant yeast
A pinch of salt
120 ml (½ cup) Coconut milk
20 ml (4 tsp) vegetable oil
50 g pumpkin seeds(raw)

Thank you for sharing this recipe. I made it today. Nice flavour and not sweet. However, I had the same problem as some others - the dough did not rise after 45 mins. I then heated my oven for a short while, turned off the heat and left the dough inside to rise for another half hour. It rose about 20%, not double :(. Further attempts to make it rise didn’t succeed. My measurements and ingredients, except two, were according to your recipe. I used gluten free flour instead of wheat flour and natural cane sugar instead of white sugar. I used instant yeast. My pan was a 5” square. I steamed the cake. What do you think could have gone wrong?
Thanks for watching the video. I haven't try this recipe using all gluten free flour. The batter consistency should be thick as in the video. FYI, I stay in tropical country. Here, hot and humid and room temperature around 32°C . If your stay in cooler area, place the dough at warm area to rise until doubled in size, longer fermentation (> 45 mins) if during winter (no winter in my country).

Yes, you can replace with potato starch. The result almost the same, it is spongy too.
Chia Kitchen, unrelated to this recipe, but on another recipe you mentioned pure rice flour and I saw you used Erawan brand. These days I can only find blended Erawan rice flour (as well as other brands). Few years ago I could still find unblended Erawan rice flour at Tesco but even since before Covid those were no longer sold at major supermarkets. Where do you source yours?
I bough from local baking ingredient store, sometimes from Shopee online store. Maybe you can get it from online store too.

Hi Florence, fermentation time depends on your room temperature. Rest the dough for longer if you staying in cold area. Refer to video 3:01 pan size is only 5in. How about your pan size? Is it bigger? How long does the dough rise?
