I had all those books as a child awesome. Boil Yellow squash with Vidalia onion or just onion boil it down use a potato masher to mush it up. Drain well keep squishing till water is out. Layer mix alternate American cheese slices and bake. Don't burn cheese just till hot. Much different than sleced and cooked. Jo Jo in VT
Countrymouse Farmhouse Thank you for mentioning cashews, I would never have thought to use them in pesto! The Indian grocery carries them at a very reasonable price, I will try this.
My Mom used to stir fry squash with a little pork and serve it with rice. Just add a couple spoonfuls of oil to a hot pan, add diced onion, then add diced tomato, add cubed pork then once cooked, you can add minced garlic and sliced squash. Salt and black pepper. Soy sauce or liquid aminos optional and sometimes I add a dash of sesame oil before serving. It is still my Sister's favorite.
I make pesto with a variety of greens. Kale and parsley to name just two. Pine nuts are expensive, so I use walnuts . You had mentioned you were kind of squashed out. I was making chili with tofu and a lot of left over garden stuff. Squash left over from supper and green /red cherry tomatoes found its way into the crock pot. Froze half in freezer bags for another day.
I am going to work on that. A lot of folks have asked for the recipes! The problem is I usually just do ... a little of this... a little of that...So I am going to go back and type in recipes for all of the food vlogs! THanks for the suggestion.

Great question! I edited out that part of the video, but 2 people have asked the question, so now I know to leave those parts. You can put it on pasta, instead of a red sauce or alfredo sauce. You can use it on toasted bread or as a dip, for pita chips. Another good recipe is, baked chicken breast, then put pesto on top, then put sliced tomato, then melt some mozzarella over it. That one is DELICIOUS!
Thank sorry took me so long to reply . I'm on my lap top here so I can ,but when I watch on my table I can't. My daughter is going to love the chicken breast recipe. Do you think that you can video that recipe just to make sure that we make it right.
you can also use it as an herby addition to other dishes: add a spoonful to your meatball mix, use a bit in a vingarette, float a spoonful on a bowl of soup... mmm, I'm getting hungry!
Kay I love pesto on fresh tortellini. When my daughter was about 12 she said the best part about her brother visiting was that I alwaysmade tortellini with pesto.

I mke pesto with cilantro and parsley and any nuts I have on hand. I've even used no salt mixed nuts and they came out amazing

Occasionally we use pine nuts. But more often go for the cheaper route.
we use whatever nuts we have, cashews are yummy.

those bell peppers, wait until they start to turn reddish, they'll taste better and be easier on your digestive system.
