Yo if you put some ice coffee into the mix of coffee jelly and whipped cream, I bet that would easily be a 10/10. its kinda like a boba tea but coffee, although you might need a square straw for the coffee "pearls"
100% best asian add to scrambled egg dishes is always garlic chives. The classic jiucai hezi is garlic chives, scrambled eggs, chopped glass noodles, optional meat (traditionally dried shrimp, but the chopped pork belly would be perfect, too), then pan-fry+steam in a hot-water-dough turnover. I can easily see it succeeding with pan-fried mochi, as well.
I always buy the regular rice flour at an asian store, but after seeing you make mochi so effortlessly (and remembering all of my failed attempts to make it myself) I'll give up and give it one last try with mochi flour.
I actually wanted to surprise a friend of mine by making coffee jelly for her, as Saiki K is her favorite anime. I was very surprised by how impossible it was to find agar agar though (in Houston Texas). We went to about 4 stores (HEB, Aldi, Whole Foods and another HEB) and couldn't find any. That was very ridiculous to me, as stores in the US are oversized and have way more stuff than any store would ever require (from a German perspective) and still had no agar agar even though in Germany, where the stores are MUCH smaller, it's very easy to find it. In the end I bought some "flavorless" gelatin, which ended up tasting extremely bad. Turns out some of those react with even light acid - like coffee - creating a horrible flavour. Lesson learned, read the package carefully (as it had a proper warning on the back) and when worse comes to worse, just order the ingredient.
If you’re in Houston check out Bellaire they have a couple Hmarts you should be able to find agar agar along with a bunch of other Japanese and Korean products there

It'll take some practice but I am pretty sure I can handle these recipes haha. Also, very nice with the curry and cold soba - I see what you did there.
Ok. Hear me out. Coffee jelly pearls in place of tapioca pearls in a milk tea "boba". Maybe make the pearls with sweetened condensed milk so that it's reminiscent of a Vietnamese iced coffee, and then put them in a strong, lightly sweetened pu-erh tea? .....Ya know, I wasn't planning to buy agar powder! Now I need to go to the grocery store AGAIN. lol
I feel like a better dish than PB&J would have been rice with pinecone jam and add some spices, but that did look like a great dessert

yes butter is very expensive, a but great alternative is lard, im in the,uk here lard is about 45p per 250g or around 55cents, but this is only if you choose to eat lard, but if you do eat lard and use it as a substitute you can make short crust pastry and put any left over katsu into a muffin try to make katsu curry tarts, perfect for breakfast in the cold weather. you'll thank me later

Growing up, we would always make mochi before New Years, as Japanese tradition. Cornstarch is your friend, do not be afraid. Also, fried mochi filled with red bean and shoyu/sugar sauce is a childhood favorite. I've never seen savory mochi like this but it looks awesome I will have to try some day.

Edit 2: Interesting take on a PB&J sandwich though imo it looks more of a Brunch item, something to eat a little while after breakfast, but not to long before lunch, and it also looks refreshing with that coffee jelly.

I would love to love coffee, but our relationship ended a bout a month ago with cigarettes having come to a realization that they only upheld my mania AND anxiety. Green and white tea it is. And so far I'm loving it. I DO get cravings for coffee but the same reminder works both for a cup as well as a cig "you want your anxiety back?"
I'm a coffee lover as well but I definitely have been there with the anxiety induced by it. Cheers to health.
