Made this recipe a few days ago and it was so delicious! The only thing I did differently is put 3 cans of cream of chicken soup so it wouldn’t dry out with the rice being cooked fully! I also added the fried onions that we use to make the green bean casserole for the topping! It was so darn good! I definite,t suggest that you cover the entire pan with aluminum so the chicken and rice can stay moist and cook faster! Then after the 1 1/2 hours of cooking shred chicken and mix everything together! Bake another 15 minutes uncovered with the topping on! Yummy!

OMG! I have to try this! I have a similiar recipe with stuffing but this looks so good.
I would maybe add frozen broccoli in the mix and a bread crumb topping for that last half hour of cooking. Looks simple and tasty!

Could you mix the cream of chicken soup and the water together so that pouring it is easier? I sometimes have the same issue distributing the thick soup evenly in dishes like this - but I'm worried that could somehow mess up cooking the rice.

I make this but I mix my soup, rice and water then put the chicken in. I feel like it’s so much easier that way

Hi Ann, can you use more than 2 cups of rice and if so do you need more water?
I honestly don't know.....if you wanted more rice, I'd probably double the entire recipe.
