  • Authentic handmade fish balls are becoming increasingly rare in Hong Kong as factories have taken over, using cheaper ingredients that fall short of the generations -old recipes. Fortunately, Lam Law Ping is one of the few artisans left in the city who continues to make these morsels the traditional way by hand. In this episode, we pay Mr. Lam a visit at his shop in Kowloon City to see him make his reputed morsels, and chat with him about this dying craft's past and future.

    This is amazing to see Mr Lam's passion and sincerity towards traditional fish balls. Thank you very much Sam and Vienne for highlighting and sharing this legendary restaurant with us. Hope the traditional method of fish ball stays on and I wish to taste it on my next visit to Hong Kong. There is so much to learn from Mr Lam for food business or any business in general.     Great series Sam - I was showing my parents who immigrated back in the 80s and we watched all the videos in one evening! Definitely brings back a lot of memories for them and opened my eyes to many different foods that I haven’t had despite visiting HK many times. You are definitely ‘ho dai dam’ to try this for a gweilo (some places my parents said they weren’t game to try)! Keep up the great work!

No where in the world except Hong Kong that you can taste the fresh fish Balls like these ! I am sure this Brand should be the most original and traditional number 1 production chain in HK.     Love this video.Next time I go to Hong Kong I will eat this man's fish balls with confidence. I always thought street food fish balls were full of artificial ingredients.This man definitely has his ethics and pride when come to his fish balls.

    My favourite (savory) street snack when I was growing up. Used to get a skewer (never in a cup) after school several times a week. The woman operating the cart got so used to me, sometimes she'll give me an extra fish ball. VIP customer. LOL.

    Best place to have these by far. Other than the deep fried fish skin, the deep fried bones taste even better, must give it a go. Give them a dip into the broth during hotpot. Yum

      Exactly! We like dunking fried fish skin in noodles with soup or hot pot (same approach to eating beancurd stick), more than just crunching it dry like eating crisps (of course you can eat however you want). Just like dunking your biscuit while having English tea.

    My 8 hrs flight and time difference jetlag was cured by one fish ball vendor in some lane in Jordon at 9o'clock few years ago. Even 7-11 fish balls are legendary !

    Another excellent video Sam. I've been looking forward to another video coming out. I didn't realise traditional fish balls use Conger Eel. The fishballs and crispy fish skin look good, it's easy to see why you are so enthusiastic about them. I will definitely be seeking them out when I visit Hong Kong.

    Great story from Mr. Lam. He said he used yellow eels to make his fish ball, but they look like belt fish to me and didn't specified amount of the fish pieces he used through out the day. Curry fish balls are one of its common street food there. The crispy fish skins would be a good topping for salads.

    I think it's a shame that despite being traditionally hand crafted (and I know they do also make a lot using old machinery), there isn't that much premium added to the hand crafted stuff. I know that fishballs aren't glamorous but we should still appreciate the craft that goes into it because, as the man says, when it's gone, it's gone.

London chinatown do sell cheung fun for you to buy, but in terms of actual little stalls selling hot cheung fun street food or fish balls, basically doesn't exist :/. Another one I really miss? Buying fresh sugar cane juice in hong kong!

      As far as we can tell it’s still there. We filmed there only a few months ago and the business was going strong. Very surprised if they’ve closed up shop since then.

    I bought a few times from the street, all their fish balls taste the same and very bad, they must got them from the same factory. Only hand made fish ball will give the authentic taste.
