hi, thanks for the explanatory video. can i use a whisker to mix the ingredients in rather than a wooden spoon as i do not have a hand mixer or stand mixer. can i replace butter for margarine?
Hi Stephanie,thank u for ur recipe. I tried it just now and the cookies are terrific! However my cookies didn't spread out as much as I thought it would. I had to pat it down during baking. What could have caused the problem?
I was thinking of doing that and replacing the vanilla extract with rum extract just to kick it up yet another notch. I am glad it's been tried before! Trying to recreate the rum raisin ice cream experience for a loved one who especially loves that flavor.

thank you for the response. i tried the recipe using butter and it was excellent. my question today is about the accuracy of the measurements: my measurement here is 1cup=250ml, but when i use a weighing scale to arrive at 260g, i end up having to measure out more than 2cups to arrive at 260g. what am i doing wrong? which should i stick to?
1 cup of liquids ( for instance milk) weighs roughly 250 ml. Liquids are heavier than dry ingredients like flour which is measured in grams. One cup of flour is 130 grams on average. Better have a scale at hand to avoid confusion at least it helped me as Europe cups are different to USA cups
Each cookie is about 1 tablespoon, so I used a 1 tablespoon ice cream scoop. This will give you about 26 cookies. www.joyofbaking.com/RaisinCookies.html

Stephanie, Do you ever use Self Raising flour in your recipes as i have never heard it mentioned. If not, why not? Is it called something else in the States and Canada? I am from Australia.
I have to say that I've followed many of these recipes and simply substituted the flour with 'gluten-free' flour (presuming it's readily available where you live?) and I've had very satisfactory and VERY tasty results! I've no idea about substituting for the Vegan options though! :)

Yes, you could use a whisk to mix the ingredients. Never tried using margarine, but it should be okay.

Instead of adding milk to loosen up the dough, try adding rum. I used Mount Gay. It raises these cookies from very good to superlative.

If using an electric oven, typically it takes about 15 minutes for the oven to reach the correct temperature.
This would be great for a bake sale and a way to use up the raisins I have. :)

If you're using a convection oven, then reduce the oven temperature given in the recipe by 25 degrees F (15 degrees C).

Self raising flour can be hard to find in the States. That is why I don't use it in my recipes.
