My grandmother was a wonderful cook and she rarely used a recipe.Growing up during the depression, she knew how to be frugal and to use what she had on hand. This old fashioned oatmeal cake recipe is a breeze to throw together and uses basic ingredients from your pantry. This is proof that the most simple, basic recipes are the best!

I bet that a cup of raisins or craisins and maybe some chopped walnuts would be great in the cake batter. Possibly a little allspice as well.

You could sub 1/2 cup applesauce for the two eggs for this, add a tsp of baking powder, cut back a bit on the salt.
