  • This is my old school EKCO knife sharpener. It was in a drawer for years before I asked my wife "what the heck is that?" Since I started using this sharpener my knives are always razor sharp. This has to one of the best sharpeners in the world.

I've got the exact same sharpener. I only use this to sharpen my knives. Got it from my dad who was a cook and staff sargent in the army for 20 years. He passed in 1998. Thanks dad for all the cooking and life knowledge you gave me.

When my mother passed in January of 2021 I got her knife sharpener from the 1950's. I had never seen her use it although I knew what it was. I was fairly certain that I was using it the correct way, so I was happy that your video confirmed it.

Hahahaha....LOL. I saw this Ecko sharpener at Goodwill today. I wasn't exactly certain it was a sharpener cause I've only seen once before. So I bought it ... got a dollar. I took it home and used it. Like I said, I've only seen this once before so I put the knife edge lengthwise, parallel the handle and began to sharpen my knife. As I sharpened, I thought how dangerous and awkward it was to put the handle in the same direction of the motion. Then it dawned on me. ... Maybe I'm doing this wrong. Duh!!! LOL .... Hahahaha....I hell as sure was. Anyway, thanks for posting your video.

I saw what you did there: When you showed how "Dull" the thin bladed knife was, you PUSHED it into the hose for the cut. When you showed how "Sharp" the larger knife was AND after sharpening the thinner knife, you SLICED through the hose. It's really tough to cut anything regardless how sharp the knife is when you try to push it through the material. It's always more efficient to slice through instead.
Now, having said that, let me say this: 15 minutes ago, I found a sharpener just like this in my dads junk drawer. My aunt had a similar dual disk sharpener as well. I've been old school for 40 years and pretty much stayed away from these things (for most of the negative reasons noted by others below). That's not to say these things DON'T do a pretty good job on cheap knives. That's where I use them (and where I'll be using this one). But NOT on my cooking and tool blades - I'll still keep them razor sharp with my stones.
Two tips for this type of sharpener: Don't use a lot of pressure, just a little more than letting it rest in the grove (you DON'T need to press the knife down like you're trying to cut the sharpener in half). Second, Don't slide your knife through the sharpener and then loop it back over the top for the next drag. Instead, lightly "Saw" your blade in the V. It doesn't take much effort, it speeds the sharpening process and takes off less metal than if you really press down and drag the knife through each time. That, and lightly sawing is a bit safer on this style of sharpener: Less force to cause uncontrolled slippage (and possible deep cuts), and you're not swinging the knife all over the place.

God bless the person who has the diligence to wear out a knife using this Ecko Knife Sharpener. What I'm saying is "IT AIN'T GOING TO HAPPEN". I've used one of these for years and it will take several strokes to sharpen a dull knife. After that you might want two or three light strokes before each use. So like I said earlier you ain't going to wear out or damage a knife and less you're trying to.

I have one from the 1930's when red and white metal ware was so popular. Had to wonder IF it WAS a knife sharpener or not. Now I know that it is, and I will be using it all the time. It's OLD as dirt, but the little wheels are still in place, and I can draw a knife thru there just fine. I am impressed. They are really an old tool, but still working like they should. Mine was made by Royal, Inc. Patented Nov. 17, 1925, so mine is almost 100 years old!!!

    Dude!!
My grandmother had the stainless steel block version with no safety handle!!
Just like yours but only the wheeled section in a slightly block slighlty bigger than the one you're using. She used it in the kitchen during 60s & 70s until she died in 1977.
My mother or one of my aunts must have taken it after her death as I never saw another like it despite looking everywhere until I happened upon one going cheap in Morrison's (Walmart's former subsidury here in the UK) in 2018 as part of a clearance sale.
I bought it with GLEE. I always called it "my grandmother's sharpener" as I never ever saw anyone else with one.
A so called former aquantance who used to be a chef saw it in my house not knowing what it was until I told him.
He sharpened one of his knives on it and was so impressed he bought his whole set of knives to my house and sharpened the lot.
He could not believe how good it was despite his vast experience yet never having come across one.
Needless to say it was so good he helped himself to it whilst I was away from home for a short period.
Needless to say he is no longer an aquantance of mine!!!
I believe BOJ of Eibar Spain still make their modern equivalent which I've seen for sale on Ebay for about $12 US.
    Such a cracking sharpener.
Ignore the gloom & doomers of this world!!

I have this type of sharpener. Its good for when your done sharpening your knife and you want to remove the wire.Just pull it through lightly a few times. It works kind of like a sharpening steal.I find it very useful for quick touch up work on the blade between sharpenings. Now with that said if you take this thing and go at like crazy with your knife you will winde up with a very fragile edge that wont last long.Everything has its place and this is a good alternative to a sharpening steel you just got be gentle when running your knife through.

So the Hell with you naysayers!

  • @austinpowers7120

Fun fact, your knives cut very well at first because the crude sharpening job leaves tiny, uneven serrations on the edge, as well as slightly sharpening it. However, this also causes the edge to become dull again much faster.
However, this sharpener also greatly lowers the length of usability that any knife may offer you. Something that may have worked well for a lifetime wouldn't last a few years using that method of sharpening, as the constant sharpening and resharpening will peel off steel like a knife peels off an orange skin.
If you don't want to drop cash on a Sharpmaker or a Lansky set, you could even just order a few stones of varying grit on Amazon or something. Anything is better than this method.

As a kid growing up my mom had two knives that she kept very sharp. One was what she called her "butcher knife" and the other was a paring knife. Both were high quality pieces. She used those two knives daily for years and cut up all manner of meat, veggies--you name it--if it was used in processing food those were the knives she used. At least once a year she would cut up 50 fryers. This is the type of sharpener that she used to keep her knives in excellent condition. Frequently she would touch them up with a couple of quick passes. Her knives showed NO unusual wear. To this day I have I lovely scar on my left index finger from that damned little paring knife.

giantspacebeaver - we’ve had this type of sharpener around the house for at least forty years and it keeps all manner of knives sharp as long as the edge isn’t serrated. I’ve noticed that on the knives made with cheaper metal the blade is worn down much quicker than a quality blade.

I think the reason why the "dull" knife couldn't cut through the hose is that it was being pushed to cut. When it was supposedly "sharpened", the "dull" knife was sliced to cut, so it appeared that it has cut through the hose easily.
If one has been working with knives, one would easily know what is the result of pushing versus slicing through an object.

Depending on the thickness and the grind of the blade...yes, a stone is a must. Thanks for the comment. The only draw back is that this type of sharpener removes metal, so over the years the blade will start working away. These tools leave a severe concave edge that takes way too much metal off the blade each time you use it due to the small circumference of the metal wheels. Because of the abrupt angle of the wheels, the knife's edge is too thin to hold an edge very long and will also have a tendency to make a series of chips and tears as you drag the blade through it. When you look at a edge done this way under a magnifying glass, you will see extensive damage to the blade.

Looks like this Ekco device strips metal off of the blade. That's fine for when there's damage that needs to be fixed. But when the edge is just dull, you need to hone it with a honing stick. That will re-align the edge to sharpness.

However, you can break it also with ease of you use it to sharpen a knife with a thick blade, them it won’t sharpen very well no matter how many times you pass the knife through. While mom and i were looking through, i spotted tge ckco sharpener....needed a sharpener bad...,and ive tried them all. I took themthing home and had it turned wrong to start with, looked online to see how to use it and boooom ...,,.awesome job. One comment talked about metal shavings and beinf brutal....of course there are...thats how you Sharpen a knife....you take a dull edge...grinnd both sides of the edge to a finer point. Now, it may grind more shavings than most sharpeners...hence...a sharper knife....but you can cut down the abount of havings by running the knife under water first and dont dry it off.

A good tip is looking up the patent numbers on your mystery tools.
I found mine in a single Google search, first result (and then a comment on the patent page lead me to this video)

I heard what sounds much like a Jenday conure in the background. People who don't have birds don't know what they're missing.

It was one of our sun conure's or maybe the mitered conure? We love birds and do bird rescue.

I don't need a magnifying glass, lol. I have a super thin fillet knife that looks like a saw blade. I have sharpened it so many times that it is getting smaller and smaller. I still think this is the easiest method of sharpening and for me it is the best method.
My blades stay pretty sharp, but you are right about chipping the blades. My thick blades are still fine so I will keep this in my pack for now. Thank you for your accurate info.

On the bottom of mine it says chromium, that is the only way I knew what the washers on mine were made of. I don't have to use much pressure at all, I would say the similar to the pressure of cutting a cooked steak with a steak knife. If the blade is super thick this type of sharpener will not work well. If the blade is super hard steel this may cause it too. My sharpener is very old, so maybe you have one that is made with different materials.

Good video. Can you please tell me if the washer are of chromium or steel or ceramic?
I know you said chromium in the end of the video, but how do you say it's chromium?
I recently got one similar to the one you have.
The one I have has steel washers, I think, doesn't seem to remove metal from the knife :(
Any tips for sharpening with this tool, I'm using a lot of pressure/force to remove the metal, is it bad?

If it was a replica then it probably does suck, I have owned wheel type sharpeners that just make the blade more dull. Sorry if you got a P.O.S, but mine is awesome.
    Was yours an EKCO?

A number of plus and minus views here so I will put my two pence worth to put it in perspective . This sharpener works by straightening the chamfered edge . So you need to use it sparingly . Once in a while you have to recreate the chamfer using whet stone or a grinding wheel / whet stone combination . This is used in kitchen to temporarily repair the dulled edges and this should not be overdone . The edge thus repaired is very low on strength as the backing up material is lost in sharpening . That has to be recreated by creating new chamfer .
Thus this is good for quick and dirty sharpening job and not for a virtuoso performance .

+Anand Ghurye Anand you are 100% right!!
I mainly posted this for the people who do "NOT" know how to use a stone and oil.
Many people want a sharp knife, but have no clue how to use all the different sharpening systems out there. I use a stone to get razor edges on all my blades, but this goes with me on all my hunts because at 8 p.m in the dark forest at 30 degrees your hands don't work like you think they will. Once you get that cold, you lose motor skills and this is where this little beauty comes in handy. It is also a wonder tool for anyone who has no clue how to sharpen a knife. Thank you for your comment and your accurate information.

These things are GREAT for a quick sharpen - "but best to use it over a rubbish bin or outside in the garden, as it creates tiiiiiiiny, dust-like metal filings that end up eeeeeverywhere!" They really are awesome though!! ;p

ImRamro That's because this is a horrible knife sharpener, you're not supposed to file away at the metal, this is horrible for the knife, maybe on some homemade piece of shit, but when you get up in to high end, nice knives yof don't want to take away any metal, DO NOT USE THIS SHARPENER!!!! A great sharpener for cheap is the Lansky Crock Stick (on amazon for about 15 bucks). The Spyderco Sharpmaker (on amazon for 60 ish) and the Lansky Diamond deluxe (Amazon for 50-60). These sharpeners don't take metal away from the knife, they sharpen it the proper way that will make your knife outlast you, your children, and then their children.

if that gizmo uses metal to sharpen your knives than it's basically and butcher steel made easy. and the same concept applies with this I.E. if you use the butcher steel too much your knife will dull faster and fatigue and have micro serrations making it a cutting knife not a slicing knife etc...Though i don't own one of those so I'm judging from information that seems logical.

    • @ImRamro
      @ImRamro  9 лет назад +2

zargodc You are right, it does tear at the blade.
I use this all the time with almost every knife I own.
The only knife I have damaged beyond repair is my super paper thin fillet knife.
This is still an amazing sharpening system and the blades stay sharp almost as long as when I use a multi wet stone.

I do have this kind of sharpener. But because knives have to be abraded for them to get sharp, I am buying cheaper knives. After about a year of using this sharpener, my 2-inch deep knife is now an inch deep.
