Oatmeal Chocolate Campagne
Proofing basket 24cm
Poolish
Lukewarm water 105ml
Bread flour 100g
Instant dry yeast 4g
Main dough
Rolled oats 50g
Unsweetened cocoa powder 20g
Honey 15g
Hot water 250ml
Bread flour 165g
Whole wheat flour 45g
Salt 4g
Chocolate chips 50g
1. First, prepare the Poolish. Mix all the Poolish ingredients well, cover the top and wait until it doubles in volume. (About 1,5-2 hours / Time may vary depending on the temperature of the working environment.)
2. Soak the rolled oats before the poolish dough doubles. In a clean bowl, soak the rolled oats, cocoa powder, honey, and hot water for at least 30 minutes.
3. When the poolish dough is ready, put the bread flour, whole wheat flour, salt, poolish and soaked rolled oats mixture in another clean large bowl. Mix well until it becomes a lump.
4. Add chocolate chips and fold several times to mix. Then, transfer it to a clean container and let it ferment until the volume doubles at room temperature. (About 6 hours / room temperature about 22-24 degrees)
5. Transfer the dough to the workbench and shape it. Place the dough to the proofing basket and let it ferment for about 1 hour in a warm place.
6. Transfer the dough to a baking tray and score the top. Bake in an oven preheated to 230 degrees for about 13 minutes - low the temperature to 210 degrees, bake for an additional 10 minutes.
