Pati, this recipe is amazing! ¡Es Muuuy Rico! I didn't want to strain out all the goodness of the Poblano pulp, so I roasted 1 clove garlic + the poblanos until charred + soft, removed seeds, + blended with the milk until liquefied. I used Mex. Cheese blend + some swiss cheese, and WOW, Qué sabor riquísimo¡! Muchísimas gracias, querida. It makes SO much I had to freeze some leftovers 😘😋 Besitos de Liz.
@@patijinich I defrosted the container of leftover casserole and heated it up on the stovetop with a little milk, and also added some pepitas (green Mex. pumkin seeds) for some crunch, and it was fantastic! The leftovers didn't taste as spicy, but still muy rico! This Mac + cheese dish really freezes well. Thanks for your great recipe. This summer I will add the corn + zucchini like you did. 😋 Liz.
In earlier shows, her boys would tease mom re Mexican accent. Her pronunciation is excellent. Just so cute ,,,,, different! I also love how easy it is to read Pati's lips.

Also ,,,,, Would like to know what type of oil Pati used making that spicy fried chicken recipe? Peanut or canola maybe. I rarely deep fry anything. ((never)) 😒 What does one do with leftover oil?? Big mess.

Excellent! suggestion: whenever i cook pasta, i don't add salt to the water...the theory being that the salt toughens up the pasta. Ever since I read that, I've waited until after draining the pasta to add salt.
