I'm from Monterrey, Nuevo León and this is how we eat carne asada! Lightly seasoned, it's all about the meat. Flour tortillas, guacamole, salsa, it all goes in your taco... Even my cousin who was a vegetarian for a while would eat those tostadas with beans and melted cheese and then put lechuga rallada, guacamole, salsa y crema on top, that's how authentic to northern Mexico this is!

Look for "frijoles maneados" or also known as "frijoles puercos" that's the style used in Sonora and shown here. Fair warning, the beans will have quite a bit of cheese and the real recipe requires pork lard and butter, there's a reason there's lot of heart disease in this region of the country haha :(

Having lived in San Diego and moved to NY recently, I started studying how to make carne asada tacos and burritos, since I don't have access to Roberto's or Santana's anymore. I prefer a street style Tijuana carne taco but I definitely got some tips from this video, which I will be using this week. I feel I'm very close to perfection. This biggest tip I can give to people who prefer street style tacos, is to cook your meat in oil that was used to cook fries. Just a ladle will do. I actually buy fries just to cook them in oil and use the oil, with no real intention on eating the fries. Unless I am making a California burrito.
Damn I miss Robertos! Originally from the Bay, but I lived in SoCal for 3 years. Now in Bklyn. Mexican food here has been getting better over the past 15 years since iv been here. Theres some great spots in Sunset Park Brooklyn.

Beans - if one can get real lard, not the nasty stuff - bliss! Also I am a huge fan of cilantro garnish - I know know many palates may not agree, but if you do not think cilantro tastes likes soap, add if you have some on hand :-)

I know flavor changes within cooking methods, kind of charcoal, wood, etc... but I am explaining people from Sonora do it in charcoal or grass grill...this is not essential info for making carne asada... charcoal its more classic and a lot of people do it this way, but there's also a looot of people who do it in a gas grill too.....
No mesquite? That’s front and center in Sonorense Carne Asada. The taco truck around the corner from me is true Sonoran style, just cabbage on the taco served with salsas. No beans or cheese! Let the mesquite flavor shine!! Places that cook it on a plancha have to hide that fact with guac and other stuff. I cook skirt steak directly on Mesquite coals like Alton Brown. Really brings out the Mesquite flavor.

I’m Mexican and I’m not insulted. It’s a bit over dramatic to imply her recipe disparages Mexican culture just because you don’t think it’s authentic enough. In her PBS show she travels throughout Mexico to learn and highlight regional foods, basically doing the opposite of “insulting” the culture. Her food reflects this. Ceci Peralta - It does matter. Flavor changes. That's either a natural gas or propane grill though, it doesn't look like a charcoal grill.
