Honestly, Grodus having low hp and defense makes sense. He's a puppetmaster, not a fighter. He spent most of the game doing what he could to _not_ fight you directly. Bowser, on the other hand, is more of a fighter and less of a thinker. He's been looking to pick a fight for the whole game.

Grodus being kinda weak would also fit the idea that's not really as much of a threat as he thinks he is, which is made VERY explicit right before the final boss fight
About a month ago, I finished up my "no-badges-equipped-or-shine-sprites-used" run of the game. Grodus was the second hardest boss to beat. Luckily, since I never upgraded BP at all up to that point, I had a ton of FP at my disposal. So, I mostly had Mario do the attacks to Grodus himself, and used Flurrie's Gale Force to eliminate all Grodus X's in one blow(Worked every time). Credit should really go to the 2 life mushrooms I had though, because I had to put Flurrie in front most of the time(who only had 15 HP).

Sometimes, I wonder how different the game would be if every boss from Chapter 4 and beyond had their HP boosted by 50%-if not outright doubled... ...and then I remember that even the OG superboss and its 200HP can be handled relatively quickly, and realize that it wouldn't change all that much after all :V
Magic and technology aren't as seperated as they used to be. A certain queen in a series about a pink ball actually has a castle that gives me similar vibes to the deep parts of the Palace. And yeah, others have pointed out, but Grodus being weaker makes sense: Grodus is technomage, but a mage nonetheless and those usually have lower HP than physical fighters like [REDACTED]. Not to mention the latter's track record by this point.
In the original, Fire Drive is actually really good in this fight as it's the only attack that can hit Grodus and his scepter at the same time, letting you deal damage and sometimes making his next attack fail. Unfortunately, they removed that in the remake, Fire Drive only hits Grodus himself.

Too bad Grodus made his staff out of a real cheap Shovel Knight checkpoint that stops working if you just crack it, would help with the upcoming fight.

This sounds like something that would be specifically checked and, if necessary, accounted for by rando devs. Note that the Paper Mario 64 rando decouples star spirits from their abilities and the abilities are simply learned in order.

13:56 The crystal stars always unlock their respective moves so on the GC you could learn Supernova as your first and only special move. But grabbing the seventh crystal star does unlock full star power so Grodus could have technically used Supernova.
One cool thing about the Grodus fight is that you can target his staff to stop him from attacking.

While we were in the Riddle Tower, all he had to do was to get to the very end and wait for the floor to lower.

The "reproduce pattern elsewhere" puzzle is KIND of in 64, in Dry Dry Ruins with the shape keys.
So in the remake, Fire Drive no longer hits Grodus' staff. You can still jump on it.
