    I THINK the reason your grill marks weren't as pronounced when you flipped the steaks is not because the grates cooled down when you opened the lid, but rather because when you flipped them, you placed them right back on the same area where they were originally. So the steaks had absorbed a lot of the heat from that area already. Maybe try positioing the steaks in a different spot on the grates when flipping, and I think you'll get marks that match the first side. Regardless, the steaks looked "grate"! Thanks for the video.

      I think you're right! In my haste to keep the grill heat in and not keep the lid open long, I just flip the steaks and not pay enough attention to where I'm placing it. But now I think this may be as equally important as the grill heat. Definitely will keep a closer eye on this in the future. Thanks for watching!!

    Nice video! I'm definitely having difficulty dialing in my grill grates. The first time, they weren't hot enough, the second time was with chops, and put those to the grates @130 degrees, and reached the 145 mark before i had a decent sear mark, so yeah, steaks tonight im thinking to the grill grates @100 degrees or maybe even 90 degrees!

    I've been thinking about getting those grill grates for that reason instead of firing up the charcoal grill for the finishing off every time. Are those a standard width for the Traeger's or do I need to search out a particular size for my 34 series. Your Traeger looks about as deep as mine.

      I believe that those grill grates are a game changer for a Traeger. You'll want to get the specific one for your 34. Now I just need to get better at the right timings and the proper twist.

    Very video on your new 810. Curious why one switched from 620 to 810? Any comments since I’m looking to buy one of them.

      Thanks! My older 620's didn't have the WiFire technology. So I kept one and gave one to a buddy. As far as the new 620 vs the 810 it's really about a matter of size and it you'd like to get the larger cooking area with the 810. If the 620 is big enough for your needs you can save a little money getting it. You'll definitely be happy with either one.

    Just bought my 810 and can’t wait to put it together. Only suggestion of
    Constructive criticism I could give is season the steak just a bit less. You paid good money for that beef, enjoy more of the natural flavor. Roast can take much more seasoning because it doesn’t penetrate as far. But it’s my opinion steaks deserve to stand up on thier own. Salt pepper garlic. That said, you enjoyed yours and that’s what matters. Great channel

    A Traeger hack-- install that front shelf UPSIDE DOWN! It’s not deep enough to hold plates, platters, etc… so install it upside down and you’ll have a usable shelf with a 1” lip.

    Did you season your grates before you used them the first time?

      Was just watching a podcast on youtube from howtobbqright. They are big on seasoning the grates when you turn on the grill, just before putting on the meat and after. I probably need to do more of this myself!

      17.375” Deep by 15.375” Wide. I think the best thing to do in this case is go to www.grillgrate.com/. You can choose the exact grill you have and it gives you the proper size.

      Just hold down the power button on the front for a couple of seconds and the grill will go into its shutdown cycle

    I don’t get it; why are you
    Setting the temperature for 200 and something degrees instead of 450° or 500°?
    And 10 minutes to let the steaks rest? I’ve never heard of that. I’ve heard of 3 to 5 minutes. 🤔

      First - thanks for watching! What we're doing is the reverse sear method. This is done on thicker steaks to ensure we hit a constant internal temperature on all parts of the steak. We're cooking it at a lower temperature putting some smoke on it until the whole steak comes up to an internal temperature of 120. Once the steak hits 120 we'll take it off the grill and then crank the grill up to 500. Once the grill is at 500 we start the sear process. We sear it on each side for 1 minute and a half or so until the steak hits medium rare at 130. I've researched a bunch of youtube videos. ruclips.net/video/nPoCb2w21K4/видео.html, ruclips.net/video/BafxVRwTwUw/видео.html. From what I've seen at least 5 minutes for sure and 10 seems to be optimum. The most fun is to give it some tests yourself and see what's best for you!

      @@bbqjones OK, that makes sense. Thank you. I used my Traeger Silverton 810 last night for the first time, and was not happy at all with the results. The steak was great, the inside was perfect, but not a good sear at all. I figured I need to buy the cast-iron grate for it, but the sales guy said you can still get a great sear just with those black grates on it. What are your thoughts?

      @@davidbrucemusicvideo Thanks for the sub! I've been thinking about quite a lot lately. I wouldn't sear again on the Traeger unless I had the grill grates. They are really a game changer. That being said, by the time you bring the steak up to 120 then you have to get the grill going up to 500. It takes another good 20 minutes to get the grill ready, sear and then rest. So it's fairly time consuming. I've been doing the steaks a bit more on the weber lately, because you can get them up to 120 and then you can put the steaks straight over the coals for the sear. Though you can get grill grates that specifically fit the 810, you can still use them on other grills, so they are worth the buy.
