I make my own ricotta with tofu. Started out with the oh she glows recipe and modified from there. It's great for lasagna or ravioli filling.

Guess what I haven't boiled my lasagna noodles for over 25 years! I use regular noodles not the no boil noodles and it comes out amazing.

I like to make a vegan cheese sauce for the top of my lasagnas and enchiladas for a stretchy goodness instead of only semi melted vegan cheese on top.

Strange layering, I do sauce, pasta sheets, white sauce, cheese, repeat finishing with a good layer of mixed cheese. ❤️
You don't need to boil the noodles, you can soak them in hot water to if you want but they will cook in the sauce when you bake it

Ive been vegetarian for 20 years and vegan since Sept 2016, I loved to cook, but a nasty bit of a medical issue has left me tired and me going for the easiest vegan meals. I am up to doing a bit more and enjoy watching her cook and explain what and why she is doing her recipe. Pls ask Momdre if she is interested.

Best way to resolve the measuring spoon issue: ditch the matched sets. Hit up the second hand stores & get all silver for teaspoons, all white for tablespoons, all green for 3/4 etc. Never have to read the fine print again.

Victoria Marie My theory is it has to do with his mood. He always seems to be happy so it could be from possitive emotions and some good genetics.
No Egg Craig He does one thing most people don't, he works in a basement where he gets limited sun exposure. The sun while we love it ages the skin. So after so many years being away from large amounts of UV exposure it makes his skin look younger. Also being exposed to cocoa butter all the time probably doesn't hurt.
I was watching this and my thigh started to feel wet so I was like, "shoot it's raining already?" but looked up and nearly blinded myself with the sun. That is when I realized that I was drooling profusely.

I worked at a nursing home for a about two years as a cook, and we had a way of taking regular uncooked noodles, yes uncooked noodles, and just layering them like normal....the trick was, when you're finished layering it all, add a good bit of water to the pan. As the lasagna cooks, it'll soak up the water. We also mixed our meat and sauce together, as well as the different cheeses. And cut down a few more steps to making it! I've been doing my own like this for years, and never had too mushy of lasagna, or undercooked! It has always come out perfect! Even the top layers!

I use uncooked noodles, too, sometimes. It is easy and less messy
I have used uncooked noodles for years (so has my husband - even before we met) and they always turn out ok. The key for my husband is to let the lasagna sit before cooking it. My key is to cook it a bit longer than the normal recipe calls for (instead of 45 min cook for 1 hour to 1h15min).
I have done this before multiple times. You add a little bit of water, and the water basically steams the noodles as the food cooks. Just be careful not to add too much or your noodles will be too soft. (:

Equal parts of soft tofu and extra firm tofu in a food processor is a great dupe for ricotta cheese. Gets the texture almost perfect.
Do you use anything to flavor the tofu?

I have made lasagna with zucchini being used as the noodles. Just slice the zucchini lengthwise as thick as you prefer your "noodles" to be. VOILA! instant no boil noodles!

Wow I am highly allergy to round up. I actually go in to toxic shock. I never knew that farmers did that . Scarey huh . I don't eat a lot of pasta anyway but goodness this applies to any wheat product . You know I'd you didn't tell me it was tofu I may have thought it was ricotta lol I really have to start using tofu . Thanks guys as always very informative lots of fun and yummy food xoxox

I found the noodles. And thank you for the Round-up warning. Also I need to scout for the ricotta/tofu, and veggie mix. I liked the fresh veggies, and the garlic bread sounds interesting. Always broccoli for the win and more protein at 7%.

My husband has planted crops for over 50 years…neither he nor anyone else we know spray round up on the crops…oh my goodness…I am horrified to hear that roundup is spray on the crops??! 😮😮 wouldn’t that kill the plant??

Not all farmers are using the Roundup. Many of them are having their crops ruined by huge companies like Monsanto. People have been fighting against it too that are small farms that have lost all they planted. So please don't say "farmers" in general. I get my seeds from a company in California that has lost several crops a year because Monsanto was spraying a crop on a windy day and the spray went way over onto their heirloom organic crops so the crops could not be used. The US is the only country that still allows Roundup use. I'm not vegan, but, I do like some of the stuff I've seen in the stores and tried. I eat a healthy Diabetic style that includes whatever I want and can make over. Stay healthy!!!

I didn't know I had OCD until I saw your mom in her kitchen. Please help or hire some to reorganize that kitchen space. I have lived in my home for over 30 years and understand how we can accumulate stuff. I did a full clean out of my bedroom closet and dresser and I whittled it all down to current used items. Made my live so much better. I need to do my kitchen next. But your mom has stuff all over the place and out on counters. It makes it so hard and confusing to find things. I love this lasagna recipe and can not wait to use it. We are expecting a cold front this coming weekend. Perfect timing!
I used to have a mini chopper just like that. Got it for $5 at a yard sale. Used it until I broke the blade. 😟😟😟😭 sure wish I could find another.

I always seem to runout of "ricotta" each time I make lasagna! The next time I make two batches of ricotta, still not enough, then I make three batches, still not enough four batches, _still not enough_. You can never have too much ricotta.
I had to look up Roundup, did a little reading halfway through your video and it turns out I live in one of the few countries (the Netherlands) that has completely banned roundup. Which might explain why I've not heard of it being used in the way Terri explained before today.

Oh wow I have the same measuring spoon set!!! They were in my mother in laws kitchen when we inherited the house, one of my prized kitchen gadgets!!! I'm such a kitchen gadget nerd, when it comes to the antique ones that still work, I loose my mind!!!
I add the same things to my red sauce! A quick shortcut for the spinach. I put the bag of fresh spinach straight into the freezer then grab a handful out as need and crush into whatever like Steve crushes Ruffles.
Where do you find vegan ricotta cheese?
We got ours from Wegman's, but I actually made a recent lasagna recipe video that included an easy and healthier homemade ricotta that is definitely easier to come by, especially now. Hope that helps!
All noodles are no boil if you add a little water to your sauce :) my mom figured that one out in the 90s after trying to stuff manacotti noodles after boiling them. Just add a little extra water to your sauce for noodles to soak up, and voila!
