I’m so happy I found your channel! I’m new to the Instant Pot and my daughters love thai curry. So we are going to try your red thai curry recipe first, then t his one. If I wanted to use TOFU instead of chicken, do you have any recommendations? (Like… brand and firmness of tofu? Press the tofu ahead of time? Add at the end with the vegetables instead of during the cooking portion…) Thanks for any insight you can provide!
Thank you so much for following! For tofu I like to use extra firm or firm, and lightly pressed. You can do the whole thing on saute mode or stovetop. Or you can follow the recipe and pressure cook for 2 minutes, subbing the tofu for the chicken. You can also use low pressure 3 to 4 minutes. Feel free to ask any followup questions.
