Compared to the baffling on my sump I'd say the area where the pickup is is too small and the oil is being consumed from there before it can "refill" from the holes around it when under a long single direction movement.

Agh, such bad luck. Trust you will figure out why this happened. Dry sump would be ideal but the cost not. But perservere and you will succeed with your E36 touring car.
