I think we need at least 16 and 18 mesh sieves: 16 mesh to catch the big pieces, and 18 mesh to catch the 'famous' stuff. (Or would it be 14 and 16 mesh?) My wife will think I've gone over the edge . . .
After 5 Chef Step videos you realized it was basically the same thing over and over. Sous Vide Protein, while waiting for protein you make a veggie side sauce. Sear Protein, draw plate art, plate and pretend its the greatest dish ever.

Big fan of Chef Steps for a long time, and becoming a big fan of Knox BBQ.
That chat at the end I think is the most interesting. Really going into how things fail is what people still learning their craft need to learn.
