Hey Mighty Joe, I always look forward to every new video you post. With that being said, I haven't seen any new videos since this one. I hope all is well and you are doing good.

I made my first visit to Truth in Houston this week, and they are truly special. I got a 3-meat plate (brisket point, ribs, and turkey) and two sides (collard greens and corn pudding). Though I am a hard sell when it comes to BBQ, it was honestly the best plate of BBQ I've ever eaten. The brisket was well rendered and perfectly seasoned. The ribs, with picture perfect bark, were delicious. The turkey was moist, buttery, and flavorful. And the collard greens and corn pudding passed the Alabama test with flying colors. And to top it off, the staff are some of the nicest people you will ever meet. One of the waiters told some regulars, "See you tomorrow." I wish I could have gone back with them. Leonard and the gang rock!

Such a great video. Both of you understand how to break the cook down analytically, and pivoted on that new start up in Houston. I've eaten so much average BBQ commercially, and you can tell the pit master is stuck in his/her ways, and won't change/pivot to produce a better brisket. (What are you spritzing those briskets with?)
This was a good video! Really enjoyed it. This video is definitely a reminder at how much work goes into running a restaurant, particularly bbq.

MJY, addendum to my previous entry. I did fine dining for years and I still have not watched The Bear, I feel you all the way. However, my comedic therapy for this is the movie “Big Night.” I always find a chuckle in that movie.

Awesome video, Truth is one of my favorites. The brisket troubleshooting is very interesting to me. I’m always looking at the flaws and thinking about how to adjust a cook for better results.

Dude, cool video. Very inspiring. I'm in the process of creating my first rub and I am being so hard on myself trying to make it unique - but delicious. Not quite the same, but you get what I am saying. Also makes me wish I could go back 50 years and try the original BBQ's etc. And yeah, you may be Knox Ave but I always sing your name like Brad 🤣🤣

It was. I’ve been fortunate to meet and cook along side some of the best which makes me feel confident in my own abilities.
Truth is probably my favorite Bbq spot! Sooo freakin good! (I’ve had just about every BBQ spot. I’m in ft worth so access to pretty good BBQ all around)

Elliot Moss started Buxton Hall BBQ in Asheville, NC. It was an incredible place and is now closed. Their food was incredible and the pork was just perfect. I picked up his cookbook and always wanted it signed but it never happened. Whole hog is an art form.
He’s a great guy. He gave me a signed copy of his book before left. It was an honor.
Truth in Houston are my favorite spare ribs I've ever had. And I've been to Franklin and goldee's and some other txm top 50 spots. Truth has the ribs on lock they're not lying when they say that guy cooks some of the best ribs in the state

Leonard's parents were the best restaurateurs in Lake Jackson. They had two very successful restaurants. One thing you didn't mention about Truth is the level of excellence in the sides they prepare. I doubt any other top BBQ restaurant could rival their sides menu.
I would’ve talked about them if they featured them in the video. Haha.
@@knoxavebbq It's funny that Truth came up today in a convo with a coworker. The first question she asked was how are their sides. I reminded her of Cafe Laredo and Cafe Aniece in LJ and she commented as most do, I miss those restaurants.
I can't imagine having to cook in that houston heat & humidity 🥵

Which brand smoker seems to be the most popular among Texas pitmasters?
Mil scale, cen Tex, moberg, primitive just to name a few.
Is there something the Houston BBQ places do different in their sausage than north texas/oklahoma? I find the beef sausage in the Houston area is often denser and drier than what I find farther north.
can't say. i dont think there's a specific type of sausage that's made for the area.

Houston vs everybody
This is just one person’s opinion but I think Houston is a better food city. But just bbq I think Austin has Houston beat.
@@knoxavebbq I know we can’t compete with Austin on bbq but I know we have good food out here, we’re very diverse with deep roots

Houston has a sleeper Q joint called Rosemeyer BBQ. I think it beats Truth. Thats saying a lot because Truth is my #1. I have not been to Interstellar or Goldies, but been to everyplace else worth a mention.
I think the term pitmaster gets thrown around, so frequently nowadays, in my opinion. This video takes you into the mind of what being a pitmaster really is.
yup. it's always been overused, but it's just an easy term to use when explaining who's do the real work. haha.

What does he mean by " the room would have been screened in, no vent hoods." No enclosed walls???
Kind of like how you seen pits on trailers that are encased but have screen walls.
It seems they didn’t have enough airflow into the room for the pits which caused backflow. Hence the adding of windows. If he just screened the walls, there probably wouldnt have had those issues.
