    I've probably watched a dozen trimming videos including franklin's, Harry soo and Texicana... This by far was the clearest and easiest with your camera angle. Thank you!

      I agree. I am a big fan of Harry Soo and Franklin, but this was one of the best trimming videos I have seen. Very good advice, I do the same.

    I too have seen many trim videos and have trimmed many briskets. This is the best I've watched. Your explanation as to why you trim each area was great and easy to understand.

    For a lot of newbies, the hardest part of trimming is seeing how much is actually trimmed off! The end results is what we strive for but when people are paying premium for a big brisket, it's scary to trim so much. But, I like the way you do it and WHY. Every brisket is different, so I suggest people not worry about how much they trim because it's the end result that you are looking for, not the size of the brisket. Good job!

    Lawl, kidding. This was a good vid. I was also annoyed with the music but I hung in there for a useful, detailed explanation of how you trim your brisket. Much respect for not sounding off at the rudeness in the comments! Everyone's a critic.
    That finished product is stunning! Just a perfect shape, looks like it's ready to fly to Alpha Centauri.

      Use the fat to make beef tallow. You can use the tallow to baste your steaks or even squirt some on butchers paper and wrap your brisket while it rests from smoking.

    This is the best simplistic video on trimming, so many videos' people are just going off the deep end and have excellent camera angles where you can't see what they are doing lol, not even talking about the brisket lol, this was so easy to watch and understand. Kudos.

    I for the first time at 60 just cut 4 of these today. Since there are only 2 of us I ended up with 3 biscuits and the end piece was trimmed for a cornbeef. So all together we got 12 briskets and 4 cornbeefs. It was half the price per pound uncut. We also picked up 2 whole top round sirloin, 2 whole bottom sirloin,aka tri tip which I cut up. All of it half the price of pre cut. While it took me 6 hours im pretty proud I was able to do that after watching some great how to videos here. I've done our own game animals for many years but its not the same at all. I also ended up with a pack of steak bites and 3 pounds of stew meat. Im exhausted now but content. My better half did all the vacume sealing. You most certainly a second person to butcher that much in one day. Thank you for encouraging us.

    Dear Mr Yim -- For those of us who are absolute, total & complete novices (such as I), it would have been very helpful to see the finished product (i.e., the result after having been on the smoker) so that we'd have some idea of the appearance of the final result. However, you're forgiven. You likely believe that EVERYONE knows what it should look like -- even if they're absolutely, totally & completely ignorant (such as I).
    Thank you, however, for identifying the knife you used. That actually was helpful!

    Gotta say, I’ve watched probably 5 other videos on this process, and im still not sure of myself. After watching your video, I had the light bulb moment. Great communication and description in your video. Job well done, thank you….I just wish I had found this last night before I butchered the packer brisket I just pulled off the smoker.

    It's possible that I missed you mentioning this, but I have found that trimming while the meat is right out of the fridge is much easier. That cold firm fat cuts very clean, but once it warms up, the fat gets jiggly and wants to move around quite a bit. Thanks for the vid!

    I just bought two 13-15 lbs whole briskets and I am trimming them tonight. I don't have a boning knife but hopefully I can achieve these beautiful results. Will have to check out if you have a video on slicing cooked while brisket. Once I get to the point end, I lose all sense and reason.

    Awesome, thank you for this video. Absolutely the best video on how to trim a brisket. Let’s just say my first brisket, prior to release of this video, was, well not so good. I thought I did well with the cook time and controlling the heat in my smoker. I just did not do well in my trimming process.

    Great instructional video! I’ve smoked two briskets so far and trimming has been far and away the most daunting step. Your instructions really helps simplify the process. One question though, what is your recommendation for a good knife sharpener? I realize a sharp knife is key to easier trimming. Thanks again for the video!

      Awesome! Glad it helps. Depends on if you have a nice knife, I would get it professionally sharpened. It’s not super expensive to do so. I even do it for my cheap knives. But I do use a honing rod every 3-4 briskets if I’m trimming a bunch of them. Hope that helps!

    Understand there's a reason people trim brisket. Has alot to do with the size of their smoker.
    I trim very little off of mine. Season mine 4 days in advance. Fat cap up over hicKory. Hours later pulled wrapped and sit. Then when serving I trim the fat for the brisket lovers.
    The reason I do this is because trusting my pit I'm not lifting the lid causing more hours of smoking time
    Allowing the fat to moisten the meat through the smoking process. Also it keeps the meat from drying out. I cone out with moist perfect brisket every time. Leaving the entire fat cap on after the meal has been served allows for reheating on other days and the meat doesn't dry out. Been doing this for 59 years.

    I use a longer straight carving knife and cut when pulling the blade. Enables me to have a longer cutting and flat surfaces.

      whatever work! i've seen alot of ppl do it. i'm just faster with a shorter knife, but it looks super cool using a carving knife. haha.

    I’m a little puzzled by your reasoning in regards to trimming. You say, “I know it looks like I’m unnecessarily taking meat off,” which is what I’m thinking, but then you say, “but I prefer it this way because it’s smoother.”
    What’s the purpose of making the meat smoother? Does it help it out in some way?

      It’s a good question. You wanna smooth out edges, because the long cook time will dry out the edges that are too thin or too sharp so it’s best to remove them.

    Awesome trim job.
    I recently took a beef in to a meat processor we used for the first time and they basically destroyed my briskets. I asked for full untrimmed packers. What I got were 2 what look like half briskets that were scalped of the fat ON BOTH SIDES and trimmed out square! This was a 1400 pound steer that I pumped the grain to for the last 3 months to finish him out. He definitely would make prime and was out of a bull very well known for his marbling. These briskets were 7 and 7.5 pounds and they should have been at least 15 and more than likely 17+. Really disappointing. I wouldn't have used this processor except since covid everything is booked over a year out and this one was able to squeeze it in.
    My short ribs were no better. The bones were cut maybe 2 inches long. The ribeyes do look amazing though.
    Gonna stick to sams club prime packers I guess. I just got so jealous of this brisket. Sorry....Venting over haha

    It's funny, I didn't actually notice the annoying music until I came to the comments and read everyone complaining about it.
    Great video though, it would have been fun to see a before and after weight, because it looked like you trimmed a ton off there, more than I've seen pretty much anybody do so far, but I haven't gone and watched all of them yet.
