The Paloma is my favorite cocktail. I've made it plenty of times at home with a combination of grapefruit juice and Topo Chico. I tried your recipe today by making my own Grapefruit soda and it is a game changer. I cannot have a Paloma any other way now.
Jean-Felix thanks again for another fantastic process. You are always so creative. I make my version using a grapefruit oleo saccharum as the sweetener. I imagine if you use agave crystals instead of white sugar in your oleo recipe you will achieve even more flavor of the grapefruit in your sweetener. I live in the great state of Texas and the Paloma is near and dear to our hearts thanks to the intense heat we experience every summer. I love Mijenta Tequila Blanco for this recipe. Thanks for continuing to share and make fantastic content.
Waiiiit whaaaat?! The Perfect Paloma?! You are speaking to me brother ❤ Personally speaking I use Topo Chico for the bubbles and acidity, with Giffard Pamplemousse, Jarritos Grapefruit Soda, your recipe for saline solution, fresh squeeze of grapefruit and lime, plus a barspoon of Mezcal and a pour over of Champagne. Then I just get a bottle of Mezcal and a liter of Squirt and some limes and just go to pound town 🤣 Kick ass that you made a fresh grapefruit soda! I love how we all bring different ideas to the mix. Respect your recipe bro 😊
@@BigFatCock0 that's the exact purpose... To over complicate it, so it sounds "extra fancy" 😂 Jarritos grapefruit and a lovely bottle of Blanco with some lime wedges is my absolute go to.
In the bar i worked at we did our own graipfruit soda. We cooked a sirup out of the juice, (i think orange blossom water) and cinnamon blossoms. And then just sodastream and mix. That went fantastic, i dont know the exact amounts anymore, i would need to recreate that
What % dilution are you getting? I just add about 1.5oz cold filtered water to my canister instead of shaking in advance but essentially make mine just like you do.
If you want to use the grapefruit soda for another cocktail, do you still add the lime juice in the grapefruit soda? Or is it to balance the sweetness of the Paloma? Thank you !
I made this recipe so there's no other ingredients to add except for the Tequila. So the sweet and sour is balanced to my taste. So if you want to use grapefruit soda in another cocktail that requires different sugar, involves liqueurs or things like that, you might want to rejigger the specs. Hope this helps
Hey JF! Was wondering if youd recommend a sodastream for making the grapefruit soda? Are there any downsides to doing this? J'en ai aucune idée mais c'est plus dans mon gamme de pris et ma copine veut un sodastream alors c'est plus facile a justifier l'achat. Wanted to try using my highschool french sorry if it was bad LOL.
The only soda maker I know that can handle sugary liquids is the drinks mate. and I think it's even cheaper than the SOda stream. And there's no downside using this. Actually, it might be even more efficient ;) Cheers! P.S. ton français est legit
Well that’s the whole point. Give it a try and you’ll see. Even top shelf mixers are filled with artificial flavors, preservatives, acids … not because they do t want to make things right, just because the fresh stuff don’t hold in a bottle. So again, give it a try first and let me know. Cheers
It is not necessary no. So if you don’t want to use msg, just double the salt in the solution. That said, Unless you experienced problems when you had ingested msg and are sure you are not tolerant, I would read a little about msg. The whole panic about it is more a xenophobic problem that arose in the 1960’s. Cheers my friend
I think in this case, The Paloma is a bright cocktail and I would be afraid that soy sauce would take away some of the bright notes. But for science sake, please try it and let us know how you liked it 😉
@@samuelhernandez4135 - 😞 I get headaches & migraines and I just don’t trust it in general…it’s just my personal choice not to consume it. Even thought it had zero scientific backing, people found it convenient to point the finger at an "exotic" ingredient instead of their own body and habits, so the term caught on, and MSG became associated with health risks.”
You are making this comment on a drink that has 24 mL of alcohol. As Jean-Félix has stated, MSG is a compound found naturally in grapefruit and other foods. The panic about MSG being harmful is a xenophobic fairy tale widely dismissed by science.

This man is a genius - love your mixology!
Sin duda uno de los cocktails mexicanos más famosos junto al Margarita. Perfecto para el verano 🤤
Lo malo es Que en Mexico los hacen pa la fregada con tequilas inferiores como cabrito o Jose Cuervo y con Fresca.
Nice! I jazz up my Palomas with grapefruit oleo saccharum, and I really like it. I'll try it your way next.

I bet your Paloma would be good on top of an extra brut sparkling prosecco like Bele Casel Superiore.
3 sources of bubbles. Feels like you're over-complicating things for the sake of it.

Question for you, do you think the Ice Spear is better than 1x1 Cubes? Or is just a preference
Must try this! (And I will probably try to see if i can make a fermented grapefruit soda as well)
That’s the kind of project I’d like to be updated on

Excited to try this recipe! I've been on the hunt for the perfect Paloma!
Really hope it’ll end your researches 😉
Great video. How did you get rid of the pulp?
2:1 Agave syrup meaning? What’s it mixed with? I appreciate some clarification here!
If you don't know what 2:1 means you should probably start from scratch.
Love this! What brand is your citrus juicer? Have never seen that one before, but looks super handy when dealing with a lot of fruit!
It’s an antique gem Sefra found for me a while back. Doesn’t have a brand
2:1 agave syrup. I haven't heard that one. Is that 2 parts agave syrup and 1 part water?
correct
What is that juicer called? Need to pick that up
It’s a vintage piece. Good luck finding it. I think it’s Juice mate
Amazing! Love it 🔥🔥🔥

You use a cream whipper designed for n2o & put a co2 cartridge in it correct?
Correct 👍 it works too with co2

Thanks Tony!
how long can you store the soda?
It’s more something to be used à la minute.
I really wants to try the Paloma this way.
Cheers to that
Nice redirect to the Margarita Video at the end!
Just a friendly reminder ;) Cheers!
Can I make the soda with iSi Soda siphon? I've read that it's only good for sparkling water.
Hey! Yes you can but remove the tube (keeping the seal) and make exactly how I did in the video
hey bro where to do you get the C02 and N02 cartridges for these b-ars cream whippers?
Amazon my friend

It is naturally found in grapefruit so making a saline solution with salt and msg is just a perfect combination
Whats the point of making all of this if you can big soda from premium brands like Thomas Henry or fever tree
