    Officially in season between April and September, James is using spinach as the key ingredient to his version of a Greek Spanakopita. Meanwhile, eggs are the main source of protein for this plant-based dish, alongside salty feta cheese and sweet sundried tomatoes.
    A family-favourite in his household, you can prep this dish in 10 to 15 minutes and have it back on the table in half an hour. Also perfect to have cold, you can have it for lunch or take on your next outing.
    James has opted for a side salad with his dish, but feel free to add your own accompaniments to this dish.
