    I’ve hardly met a vegetable that I didn’t love when roasted. Coming out of winter, I particularly enjoy delicata squah, brocolli, bell peppers and onions, and brussels sprouts. I make sure to prepare extra and pop the leftovers in the fridge. I pull them out for topping salads and just as a snack; they’re so sweet, it’s like eating candy!

    I especially love roasted asparagus and also Brussels sprouts.

    Love eggplant, zucchini, yellow squash, mushrooms. They are SO Good !!

    It looks like I’m roasting garlic this weekend.😁 I completely switch it up with spices and different veggies. I usually take the roasted veggies and prep some for breakfasts during the week when I have limited time. I just warm them up with my eggs.

    Im scared of spices. I need a recipe but also want to learn how to use spices without a recipe. How do you know what to mix together and how much of each to put in?

      Im so glad you shared this! Thing is, a lot of people are scared of spices. Often, they can be associated with indigestion or gastroenteritis, but they are not synonymous.
      The beautiful thing with adding spices or herbs is that there are no rules - you can add them per your liking of them. The way to figure it out is simply to experiment!! Practice adding some during cooking, other times add them to the already cooked food once it’s on your plate. You’ll start to get a flavor for what you like (see what I did there? 😉)
