Mongolian Beef
For the Marinade
1 1/2 pounds flank steak
1 tbsp cornstarch
1 tsp white pepper
2 tsp soy sauce
2 tsp Shaoxing wine or dry sherry
2 tbsp avocado oil
1/2 tsp baking soda
For Coating The Beef
3/4 cup corn starch
For the Sauce
2 tbsp cooking oil
5 cloves smashed and rough chopped garlic
1/2 thumb-sized piece of sliced ginger
5 dried chilis (optional)
1/3 cup soy sauce
1/3 cup water
3 tbsp light brown sugar
2 tsp white vinegar
2 tsp fresh ground black pepper
Garnish with green onions and toasted sesame seeds
Serve with white rice

Made this tonight with the only alteration being strip steak instead of flank. Unbelievably tender and an absolute flavor bomb of a dish. Made this accompanied with the fried rice from your cook book and this meal over impressed everyone, myself included.

Basically velveting. That's what chinese places do and the mouthfeel is so good. Baking soda breaks it down, cornstarch gets it crispy. I've done it this exact way too and it's DELICIOUS AS HELL.
I velveted my beef tonight to add to my wonton soup and it was super tender!
