2. There must be enough water in the steamer, and the whole process of steaming with high heat, do not open the lid during the process!
Brown sugar Steamed Fatt Koh/
Ingredients:
250g plain flour
16g baking powder (4 teaspoons)
60g caster sugar
80g brown sugar
250ml water
50g oil ( 4 tablespoons)
Pandan Coconut Milk Huat Kuih
Ingredients:
Self-raising flour 150g
1/2 tsp baking powder
1/8 tsp salt
60 grams caster sugar
90ml coconut milk
70 ml pandan juice
Corn Oil 1 tbsp
Steamed Rice Fatt Koh
Ingredients:
300g rice flour
100g caster sugar
300ml water
1 1/2 teaspoon Original Eno (about 5g)
Pumpkin Fatt Koh
Ingredient:
250g self-raising flour (sifted)
100g pumpkin puree
150ml water
110g sugar
1 teaspoon baking powder
40g corn oil

Made this today but it does not blossom (Huat 發) like yours. Why?
Fyi I used instant yeast and not sugar tolerant yeast.
Hi, thi's my 2nd time steaming the Huat kuih, I fail my 1st tried. This time it bloomed very well, while in the steamer. I was so excited. I open the lid slightly for 5mins before removing from the steamer. I felt so sad, as it shrinked as it cools. What was my mistakes and how to avoid the shrinking. Hope to get some advice from you. Thanks
