The holes in the walls would have been for getting the ashes from the fireplaces down to the basement so they don't have to walk them through the house
That was my thought too. As they cleaned fireplaces, it was to dispose the ashes.
I had similar 'chute' from my 1st floor woodburning fireplace down to my basement which had a sliding piece of metal to access the ashes for removal.
This was my first thought too. The tunnel even has ash stains on the cement probably from charcoal and still simmering wood.

Crazy how things you try so hard to keep crumble at the slightest touch, but things you want to be rid of require a jackhammer.

Do you think that open space by the original fireplace might have bed. A “dumb waiter” 😢to bring food up from the kitchen to the next floor and dirty dishes back down?
I wondered that too. There had to be a dumbwaiter somewhere in the kitchen since it was on the bottom level and the dining room was at least one floor up. In addition, it was needed to bring breakfast in bed. Would be interesting to know where it is/was.
I thought dumbwaiter as well, but it didn't look big enough after Dan cleaned it out. It would be interesting to find out. Greetings from Canada 🇨🇦
I guess it is because the fireplace is made to withstand fire.. while other crumbling places are not so fire proof?
Dan I have a small suggestion for you to consider. When I renovated an old house a few years back I put in an old wood burning stove as the first thing to have something to provide a little heat in the winter as we did the place up. Now seeing you and your “guests” reminded me of all the raclette parties we had with the fireplace keeping us warm. If possible and with a long renovation with lots of offcuts to burn, it might be worth thinking about to put one in the kitchen once you have a floor to both dispose of the off cuts and to keep you and any “guests” warm and cozy. Congratulations on you massive success I have been watching you for a long time it is really great to see everything to come together for you.
Two week wait is a very long time considering where you are in the month of July . Winter will be upon you and I do not believe you will done . At least not at this rate .

Hi Dan, a lot of chateaus used those tunnels (airducts) to distribute the warmth to other rooms on other floors, they should lead to vents on upper floors instead of the chimney.

The specific bird you can see is a Common Redstart, it is known to prefer to build its nest on buildings, walls or any kind of human construction of some kind.. so yes it is a very human friendly and beautiful little bird. It can even nest in bird boxes at times.

Dan, maybe they had bells hooked to a wire to each room. It seems that they could call servants that way. In any case you could run plumbing and electricity through that empty space.

As someone else on here has said, it seems those concrete base holes, were for letting the cold ash (when the fires in the rooms were cleaned out) going down to the kitchen to be disposed of. Seems like a brilliant idea anyway! Bit like our modern day central system for the hoover?! Your cementing of the stones in place, is so neat and tidy. xxx

For those air shafts, have you ever thought of using the plumbers aid where they send a camera down the drain to see the condition of the drain and what is blocking the line.

Here is an off-the-wall suggestion about those odd, circular voids: in the 1910s and 20s, people were obsessed with Pseumatic tubes to send messages from one paart of a buildign to another or even between buildings.
That's what I wondered too, a way to communicate from upper floors to the kitchen.
Or a path for mechanical bell-rings, or speaking tubes.

Hope the tiles weren’t cracked in the kitchen floor by everything falling on them from the fireplace. You know me I’m a worrywart. I’m pleased to see you wore protective glasses. However the rest . . . Nope, not going there as Dan is a big grown man who can decide if he wants bad allergies and or silicosis. Yeah, that was my first thought when large heavy portions of the fireplace debris hit the basement kitchen floor..."Hope the tiles weren't cracked". However, I also realized that stone 'bbq pit/whatever' was right underneath where Dan was working on the fireplace, so, maybe tile not impacted so hard.

Your chateau mascot ( the sweet little bird) is rooting you on! It’s almost as if she and her ancestors have been residing on your property for years and seeing new life coming back to the once abandoned chateau intrigues the bird! Of course, that’s just what I took from seeing the bird hanging around. It could also be your guardian angel since you regularly do not wear safety gear lol! 😂 all joking aside, the holes in the wall are a real head scratcher for me 🤔perhaps if you had an original blueprint you could answer that burning question. I would check and make sure it won’t eventually hurt the integrity of the wall leaving the hole there (although they have already been there for goodness knows how long) and of course if it’s original to the build I should be preserved IMO. This chateau holds many secrets to be be unveiled as we go along so it’s definitely exciting!!

I was fixing to go to bed and while brushing my teeth along comes Dan the Man, my Hero!
That little bird is complaining, Dan. I reckon it must have had plans to build its nest in the building or in one of the trees and now it's been displaced. Have a chat to it and explain that it can stay anywhere it wants. They can be terribly reasonable if you just explain things to them!
You could also arrange a bird bath near the chateau. Animals need clean water in the heat. Maybe some bird seed thrown around nearby to get them used to a fresh source of water?
and dont forget, some loose soil near the bird bath, they love a good dry dirt bath to get rid of unwanted passangers!
and yes, talk to the bird, its curious why your rebuilding such a big nest and if its ok to watch and set up shop nearer the place 😊

Middle of winter here in New Zealand 🇳🇿 end of a busy week and the first thing I do to unwind is grab a glass of red and sit down to watch this incredible man transform a very cool old chateaux. Perfect way to end the week.

I had a 150 yr old house once and decided to knock the fireplace back to the old one. I did that, and my neighbour said , "No, keep on going there's another one behind." And there was. It went a meter back and was brilliant for a log burner. Keep up the good work Dan. But don't burn yourself out! Have tou seen what Ed at Bordlofe has bought? He is as crazy as you. But crazy or not, you will both succeed.

Hi Dan. I'm halfway through tonight's video and I was thinking you need once of those snake cameras plumbers use to look into pipes to see where the voids go. Or maybe a friend who is a proctologist that is willing to lend you their camera.

I have seen in older properties where a bread ovens were used, maybe?

Dan it looked so comfy with your GUESTS and the lovely dinner table. Maybe it was a kind of shoot to send things down to kitchen or maybe even the laundry 🧺 🤷♀️❤️
Those lined holes still are used in France for buildings of a certain size, it makes plumbing easier...also gas distribution to different apartments...those two pipes you cut the other day came out of one of those holes...it for the water feed to the bathrooms, heating throughout the home...water went from the tanks down to the kitchen then another pipe fed the radiators and hot water faucets in the kitchen, bathrooms and heating...in my Paris flat I have two of those tunnels one through a closet for the hot water heater and black water out of the bathroom and the other in the kitchen it's only for pipes.
Much, MUCH better -- lovely fireplace revealed. It would be good to know whether those mysterious tunnels were meant to send something UP, or something DOWN! And the little birds that are keeping you company -- they remind me of the robin in The Secret Garden that watched the little girl as she brought the garden back to life after being dead for so long. It was waiting for that rebirth, just like the chateau!

All those pockets and shafts are intriguing. It may be difficult to find out with all the remodeling over the years. Wish you could find the original plans at least.
It looks like a old heating system where hot air was channeled from the hearth/stove in the kitchen that was usually lit and they "reused" the extra heat in the rooms above, as heat rises it was free fan les circulation/heating. You could always block of the bottom opening and fill them with concrete to add strength to the walls if you do not intend to use them. Do ask a architect/builder first just to be safe.
Yes, sure I've seen similar comments in another chateau context before. If I remember correctly, that was leading from a furnace in the basement, rather than the kitchen.
