  • This dish should not be mistaken with ginisang talong because this one only uses the same ingredients as adobo for the flavor and there are no onions or tomatoes used in this one.

    Kanya2ng lng nman tau ng psnglasa,Meron taong masmataas ang pnlasa sa maasi,maalat,at sa iba pang lutuin.pero ok rin ung mild lng Kasi madali nang magdag2depende sa ating pnglasa pero ok nman ung recipi madaling gawin at simple thank you for sharing w/us

      Hindi naman po. Ang vinegar pag nakapagsimmer ng several minutes, tumatamis po. Yung acetic smell nya nawawala po.

      @@dittysfil-amkitchengardenandmo, that is true especially if you used ACV, after it had simmered for a while, the vinegar reduces & becomes more sweet than sour.

    Never tried adobong talong. Looks delish so I will try this recipe but less vinegar might not even fry the talong to minimize the use of oil. 😊

      Sa amin pre cooked ang talong pero grilled tapos saka pa lng himay himayin ng pahaba or half boiled lng ito tapos himay himayin ng pahaba then i adobo na.. so hindi cya oily.. yummy

    Hi, Ditty! Thank you for sharing your recipe! I used to have that dish when I was growing up and loved it. Although, I haven't had it in more than half a century (56 years to be exact) since I had moved out of the country. After watching your video, I'll definitely try making it. Just one comment on the ingredients, sometimes my mother will incorporate bagoong instead of patis. Thank you much again for presenting it calmly and at a good rate of speed.

      @@rosariodecastro1842 Hello po. I normally don't give a specific measurement because I would not know the size and quantity of the eggplants you are cooking and for how many people. Also some people can't have too much soy sauce for health reasons. It would depend on the individual taste.

    thanks for sharing now i am graving 😊. on my version try adding tomatoes after cooking the garlic and blend until cooked then lastly will be the fried eggplant. if you have fish sauce ( alamang in pilipino ) use it to taste instead of salt. its delicious chow

    Thank you for inspiri me to try this eggplant recipe. I tried it and added brown sugar, used ACV instead of white vinegar. It turned out yummy and my family really loved it!

    For the folks who are concerned with the oily part of the cooking (as I do also), I'd suggest to transfer the fried eggplant directly from the frying pan onto a paper towel and let the paper towel absorb some of the grease. Better yet, for some who may have health concerns with frying oil, I'd further suggest using extra virgin olive oil for frying. It's been noted that EVOO is a healthier alternative to corn oil, vegetable oil, lard, or canola oil.

      I appreciate your comment on the video. I agree. I have been using EVOO on my cooking videos for about a year now. Yes, you are right. Paper towel does absorb the oil and eggplants have a tendency to absorb so much oil when fried and it is hard to get around it. I have learned a lot and willing to learn more. Thanks.

    Do you have the proportions. How much vinegar? I saw some comment said theirs came out too sour? And how much soy sauce?

      In my videos, I am specific about what ingredients I use but I don't have measurements of the ingredients, because it would depend on several factors, such as how many eggplants or how many people you are cooking for, whether you like it on the salty side or not too much salt, or if you like it with a lot of vinegar or not so much.     hi, can I use the regular american talong for this? Do I have to prepare the talong differently? Some people say I have to salt them and remove the bitterness first. Thank you for the recipe!

      I have never tried using American eggplant for this but I don't see why not. American and Asian eggplants, for me, tastes the same. I don't remember any bitterness at all.

      Actually, from what I've learned, the purpose of sprinkling salt to the eggplant is to draw some of the water or moisture out of the eggplant. It lessens the splattering of the oil when frying. I also had never detected any bitterness from the meat of the eggplant. I do taste bitterness from the skin. Unfortunately, I feel that if I peel the skin, the eggplant will not hold its form but rather fall apart. Just want to share some of the things I learned from what I've considered "reliable source". Everyone can take it or leave it.
