For the folks who are concerned with the oily part of the cooking (as I do also), I'd suggest to transfer the fried eggplant directly from the frying pan onto a paper towel and let the paper towel absorb some of the grease. Better yet, for some who may have health concerns with frying oil, I'd further suggest using extra virgin olive oil for frying. It's been noted that EVOO is a healthier alternative to corn oil, vegetable oil, lard, or canola oil.

Paper towel does absorb the oil and eggplants have a tendency to absorb so much oil when fried and it is hard to get around it. I have learned a lot and willing to learn more. Thanks.
In my videos, I am specific about what ingredients I use but I don't have measurements of the ingredients, because it would depend on several factors, such as how many eggplants or how many people you are cooking for, whether you like it on the salty side or not too much salt, or if you like it with a lot of vinegar or not so much. hi, can I use the regular american talong for this? Do I have to prepare the talong differently? Some people say I have to salt them and remove the bitterness first. Thank you for the recipe!
I have never tried using American eggplant for this but I don't see why not. American and Asian eggplants, for me, tastes the same. I don't remember any bitterness at all.
Actually, from what I've learned, the purpose of sprinkling salt to the eggplant is to draw some of the water or moisture out of the eggplant. It lessens the splattering of the oil when frying. I also had never detected any bitterness from the meat of the eggplant. I do taste bitterness from the skin. Unfortunately, I feel that if I peel the skin, the eggplant will not hold its form but rather fall apart. Just want to share some of the things I learned from what I've considered "reliable source". Everyone can take it or leave it.
